    My easy homemade refrigerator bread and butter pickles recipe has the perfect balance of sweetness and tanginess!

    Homemade Bread and Butter Pickles

    I grew up with bread and butter pickles and love them! They are a type of pickled cucumber with the most delicious sweet and tangy flavor. These are seriously so good!

    I make them with vinegar, salt, sugar, and the perfect blend of pickling spices. The result is a sweet, tangy, crisp, and colorful pickle! For more easy pickle recipes, see our homemade dill pickles, delicious pickled beets, quick pickled carrots, or these easy pickled red onions.

    Key Ingredients

    • Cucumbers: I recommend using Kirby cucumbers, Boston pickling cucumbers, or other pickling-specific varieties. They stay crisp in the brine and make delicious pickles. If these aren’t available, smaller Persian cucumbers are a good alternative.
    • Vinegar: Look for distilled vinegar labeled with “5% acidity” on the bottle.
    • Salt and Sugar: For bread and butter pickles, I use pickling salt or sea salt, and granulated sugar for sweetness.
    • Spices: I’m a big fan of store-bought pickling spice, and my go-to is McCormick’s blend (you’ll spot it in almost any grocery store). It has cinnamon, allspice, mustard seed, coriander, bay leaves, ginger, clove, red pepper, black pepper, cardamom, and mace. Then, I add some extra peppercorns and ground turmeric, adding color and flavor.

    How to Make the Best Bread and Butter Pickles

    It’s all about having a balanced brine. The magic behind these pickles lies in their simple brine. Just like my pickled beets or these easy dill pickles, these bread and butter pickles are refrigerator pickles and only require two simple steps:

    1. Slice the cucumbers into coins and place them into a jar.
    2. Cover the cucumbers in the jar with my sweet and tangy vinegar brine.

    Let them cool. Let them cool to room temperature, refrigerate the jar, and enjoy your delicious bread and butter pickles!

    Simple homemade refrigerator bread and butter pickles made using vinegar, salt, sugar, and the perfect blend of pickling spices. These pickles have the most delightful balance of sweetness and tanginess!

    1-quart (1 liter) jar

    You Will Need

    1 pound (454g) pickling cucumbers, like Kirby, sliced into coins, 3 to 4 cucumbers

    1 ½ cups (355ml) vinegar (5% acidity)

    3/4 cup (150g) sugar

    1 tablespoon pickling spice, see notes

    1/2 teaspoon ground turmeric

    1/2 teaspoon peppercorns

    1 ½ tablespoons (23g) pickling salt or sea salt, recommend using weight, see notes

    Directions

      1Combine the vinegar, sugar, pickling spice, turmeric, peppercorns, and salt in a small saucepan over medium heat. Let the mixture come to a simmer and continue cooking until the sugar and salt completely dissolve.

      2Pack the sliced cucumbers into a 1-quart (1 liter) jar.

      3Carefully pour the hot pickle brine over the cucumbers. Leave about 1/8-inch of space between the top of the brine and the lid of the jar.

      4Allow the jar to cool down to room temperature. Then, securely tighten the lid with your fingers and place it in the refrigerator.

      5Let the pickles sit undisturbed overnight before enjoying them. For the first night, position the jar upside down in a bowl and flip it right-side-up the next day.

      6The pickles will last in the fridge for up to one month.

    Adam and Joanne’s Tips

    • Picking spice blend: There are quite a few brands that sell pickling spice blend, we use  McCormick “Mixed Pickling Spice”
    • Are these shelf stable? These pickles have been specifically designed for refrigeration storage. They are meant to be kept in the fridge at all times. However, if you’re experienced in canning, you could potentially adapt them for long-term shelf stability. This would involve using sanitized jars, new lids, and a pressure canner.
    • Different salts can be used for pickling. Pickling salt is best, but you can also use Morton’s kosher salt or sea salt. Avoid table salt due to additives. If using Diamond Crystal salt, you may need to adjust quantity as it’s larger than pickling salt. We recommend measuring by weight for pickles. If you are measuring by volume (like tablespoons), you will need about 50% more Diamond Crystal salt.
    • Nutrition facts: The nutrition facts provided below are estimates. We have used the USDA database to calculate approximate values. It is difficult to calculate how much salt and sugar are in the pickles, so we have included all of the brine in the calculations (which is why salt and sugar is higher).

    Homemade Mushroom Powder Seasoning

    A jar of this homemade seasoning sits next to the salt and pepper in our kitchen. We first tried it after visiting Seattle’s World Spice Merchants. They sell their own version, and it blew us away. The moment we tried it, we knew we needed to figure out how to make it at home. That was years ago, and we’ve been making it for ourselves ever since.

    We’ve shared our love for this umami packed seasoning before and use it in the following recipes: homemade taco seasoning, mushroom stuffing, spaghetti and meat sauce, vegan meatballs, and gravy.

    How to Make Homemade Mushroom Powder

    Tip 1: Use a blender or food processor. If you have a blender or food processor, this really could not be any easier. The base is made from dried mushrooms, which can be found in most larger or specialty grocery stores. Use one variety or mix several together. We love porcini mushrooms for their deep, aromatic flavor.

    To make the powder, place the dried mushrooms into a food processor or blender and process until they become a fine powder. That’s it!

    Tip 2: Make it an all-purpose seasoning. For extra flavor, turn this into a simple all-purpose seasoning blend. After blending the mushrooms, stir in onion powder, garlic powder, pepper, and salt. I’ve shared exact amounts in the recipe below!

    Makes about 1/4 cup

    You Will Need

    1 ounce dried porcini mushrooms, substitute dried shiitake mushrooms

    Directions

      1Place the dried porcini mushrooms into the bowl of a food processor or blender. Close the lid, and then blend until a very fine powder. Do not open the lid. Wait for the fine powder to settle before opening.

      2When the dust has settled, transfer to an airtight container. The mushroom seasoning will keep for up to 6 months.

    • All-purpose seasoning: You can stir additional spices into the blended mushrooms: 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon ground black or white pepper, and 1 tablespoon fine sea salt.
    • When blending, don’t be surprised if some mushroom dust comes out of the food processor or blender. A damp dishtowel covering the top of the processor or blender lid can help a little. Even with this, you will likely need to clean up some mushroom dust around the work area.

    Serve these chicken bites next to cilantro lime rice, alongside roasted broccoli, tucked into warm corn tortillas, or on top of one of our favorite salad recipes.

    Key Ingredients

    • Chicken: I usually make this recipe with boneless, skinless chicken breasts, but it works just as well with chicken thighs. Whichever you use, cut the chicken into 1-inch pieces to make them bite-size.
    • Butter: I love the flavor of butter in this recipe, but olive oil works just fine if that is all that you have. If you plan to marinate your chicken longer than my suggested 15 minutes, you may find that the butter hardens again. Don’t worry about this, as it will melt again and help the chicken brown as it bakes in the oven.
    • Honey: Honey baked chicken is super delicious (especially with the butter), but maple syrup is an excellent substitute!
    • Orange: I love fresh orange zest in this recipe and use my fine grater (often called a Microplane) to grate it. Lime or lemon are also great options.
    • Hot Sauce (optional): When making this for my son, I leave the hot sauce out, but if it’s just for me or Adam, I go all in with four or five dashes of hot sauce.

    These little chicken bites make the perfect easy dinner or simple chicken appetizer! I love them on top of a salad or with a side of veggies. To serve as an appetizer, skewer each chicken bite with a toothpick to turn them into finger food!

    4 Servings

    You Will Need

    1 ½ pounds skinless, boneless chicken breast or thighs

    2 tablespoons butter, melted

    2 tablespoons honey

    1 tablespoon orange zest

    1/2 teaspoon fine sea salt

    1/4 teaspoon fresh ground black pepper

    Hot sauce, optional

    Directions

      1Cut the chicken into 1-inch chunks.

      2Combine the melted butter, honey, orange peel, salt, pepper, and 2 or more dashes of hot sauce (optional) in a medium bowl.

      3Add the chicken and toss well. Set aside for 15 minutes to marinate.

      4Preheat the oven to 375°F (190°C) and line a baking sheet with foil or parchment paper.

      5Arrange the chicken on the baking sheet. Drizzle any marinade left in the bowl over the chicken. Bake until the internal temperature of the chicken reaches 165°F, 15 to 20 minutes.

    • Butter: I love the flavor of butter in this dish. If you plan to marinate your chicken in the fridge, the butter will harden again. This is fine and it will melt as you bake the chicken in the oven later. If you’d prefer a substitute, use olive oil.

    Easy Fry Sauce Recipe

    My fry sauce recipe is super easy and makes a tangy, creamy, perfectly sweet sauce that is incredible with fries, burgers, and more!

    I used to order delivery from a local burger place whose fries always came with fry sauce (I loved the sauce!). One night, they forgot the sauce, and I was so bummed. From that night on, I was determined to make my own so I would never be out of fry sauce again!

    This is our family’s best fry sauce recipe, which we love with fries (obviously), but also chicken nuggets, fish sticks, roasted veggies, and more! For more dipping sauces, try our spicy mayo, burger sauce, and creamy honey mustard.

    Key Ingredients

    • Mayonnaise: This is the base, so use a good-quality mayo or make your own mayo. For a vegan option, here’s our recipe for vegan mayo!
    • Ketchup: This turns our sauce pink and starts to turn it into fry sauce. I prefer slightly less sweet ketchup, but use what you love. We also have a recipe for homemade ketchup if you are interested.
    • Vinegar: I love a little white vinegar (distilled). White wine vinegar would work, too.
    • Hot Sauce: You can add as many dashes as you like. I really love using a vinegary hot sauce like Crystal.
    • Worcestershire: This gives the sauce a little backbone and just makes it taste better.
    • Pickle Juice: We say it is optional in our recipe below, but we always add it (we love dill pickles in our home).

    How to Make Fry Sauce

    Tip 1: Make the base. Pretty much every fry sauce begins with good old mayonnaise and ketchup. The ketchup gives it that classic sweet, tangy pink color we all know and love.

    Tip 2: Making it better with vinegar and heat. What really makes our sauce taste amazing is balancing the mayonnaise and ketchup with a handful of tangy ingredients like vinegar, hot sauce, and pickle juice. Then, for a bit of extra richness, we love Worcestershire in there, too. These tangy ingredients are what make this sauce totally irresistible. We can not stop dipping!

    Some of our favorite dishes to serve with fry sauce are below:

    Homemade Fry Sauce

    Easy Fry Sauce

    Our fry sauce perfectly balances tangy, creamy, and sweet. It’s perfect for dipping French fries and is delicious on a burger. It’s easy, and I bet you already have everything in your kitchen.

    Feel free to increase the ketchup or add more ingredients, such as spices or dill pickle juice (Adam always adds a little pickle juice to the sauce when he makes it).

    To take the sauce up a notch, try making it with homemade mayonnaise and homemade ketchup. If you are egg-free or vegan, swap traditional mayonnaise with our homemade vegan mayonnaise.

    Makes 3/4 cup

    You Will Need

    1/2 cup mayonnaise, try homemade mayonnaise (120 g)

    1/4 cup ketchup, try homemade ketchup (60 g)

    1 tablespoon distilled vinegar

    3 to 6 dashes hot sauce, like Crystal

    3 to 4 dashes Worcestershire sauce

    Salt, to taste

    Dash dill pickle juice, optional

    Directions

      1Whisk together the mayonnaise, ketchup, vinegar, hot sauce, Worcestershire sauce, and pickle juice until smooth. Taste, and then season with salt.

      2Store fry sauce in an airtight container, in the refrigerator, for up to one week.

    • Vegan fry sauce: Substitute the mayonnaise for vegan mayo, leave out the Worcestershire sauce, and make sure that all other ingredients are listed as vegan.

    I love roasted chickpeas and have fallen hard for this honey roasted version! They’re so easy to make with just a handful of ingredients, and seriously, once you start, you won’t be able to stop!

    There’s no shortage of chickpea recipes on Inspired Taste. We’ve shown you how to cook chickpeas from scratch, make the best hummus, add them to salads, and more. And today, we’re sharing another of our favorites: these crispy honey roasted chickpeas!

    Roasted chickpeas are easy to make, and you can adapt the recipe to your favorite flavors. Our recipe below uses honey and sea salt for a sweet and salty snack, but feel free to change things up to match your favorite flavors!

    Key Ingredients

    • Chickpeas: For this recipe, you can use canned or cooked chickpeas. Whatever you choose, before roasting them, you need to get the chickpeas very dry. I pat them dry and then leave them out to air dry for about half an hour.
    • Honey: You’ll add the honey towards the end of the roasting time, which caramelizes it onto the chickpeas. Use something you love!
    • Oil, Cinnamon, and Salt: I love the flavor combination of honey, olive oil, cinnamon, and sea salt. It’s delicious!

    How to Make Honey Roasted Chickpeas

    These homemade roasted chickpeas are a delicious and healthy snack. To make the best roasted chickpeas, there are a few things to keep in mind. First, we want them to be really dry, so pat them dry and let them air dry on the counter for 30 minutes to an hour. From there, you’ll roast them in the oven. I roast them plain without any oil so they can crisp up. I don’t peel them, and I like how some peels turn extra crispy in the oven.

    How to Make Honey Roasted Chickpeas: Drying chickpeas before roasting

    When the chickpeas are nice and crispy, I toss them with my seasonings. For this recipe, that means honey, olive oil, cinnamon, and salt, but you can always change the seasonings to what you love. For example, you could skip the honey and cinnamon and use your favorite savory seasoning blend (think chili powder, Cajun seasoning, or ranch).

    How to Make Honey Roasted Chickpeas: Tossing with honey, cinnamon, and salt

    After 5 to 10 more minutes in the oven, I turn the oven off, open the door, and let them sit in there until the oven and chickpeas are cooled down. This last step gives them one more chance to crisp up even more.

    I love these easy honey roasted chickpeas! You can use cooked or canned chickpeas for this recipe. If using canned, each 15-ounce can contains about 1 1/2 cups of beans, so you will need 2 cans. For the chickpeas to become nice and crispy, they need to be dry before roasting. Patting them dry and air-drying helps with this.

    Makes 3 Cups

    You Will Need

    3 cups cooked chickpeas, drained and rinsed, from two 15oz cans

    1 tablespoon extra virgin olive oil

    1 ½ tablespoons honey

    1/4 teaspoon ground cinnamon

    1/4 teaspoon fine sea salt, or more to taste

    Directions

      1Spread out chickpeas on a paper towel. Pat dry, then let air dry for 30 minutes to an hour.

      2Preheat the oven to 375°F (190°C).

      3Line a rimmed sheet pan with parchment paper, and spread chickpeas in one layer on the pan.

      4Bake in the center of the oven until crunchy, 35 to 45 minutes, stirring and rotating every 10 minutes. The chickpeas will continue to get crunchy as they cool.

      5Meanwhile, stir olive oil, honey, cinnamon, and salt in a small bowl.

      6Take the roasted chickpeas out of the oven, and while they are still hot, toss them with the honey mixture until well coated.

      7Bake another 5 to 10 minutes. Shut off the oven, open the oven door, and let the chickpeas cool inside. (This will help make them even more crunchy.)

    • Storing: Roasted chickpeas can be stored in an airtight container for up to a week. (Do not store them in the refrigerator, which causes them to lose their crispiness.)
    • Savory version: This recipe can easily be adapted for a savory roasted chickpea snack. Instead of mixing the olive oil with honey and cinnamon, try your favorite spice blend or leave them plain and lightly season with sea salt.

    Buttermilk Banana Pancakes Recipe

    My family loves these buttermilk banana pancakes! Mashed banana adds so much flavor, and the buttermilk makes them deliciously tangy. If you don’t have buttermilk, I’ve got you covered with an easy substitute in the recipe.

    Easy Buttermilk Banana Pancakes

    We have many pancake recipes on Inspired Taste, but these buttermilk banana pancakes are my son’s favorite! He’s on to something because I have to tell you, these are truly fantastic.

    If you don’t have buttermilk on hand, don’t worry! I’ve included my quick DIY buttermilk recipe in the tips section below our recipe. For more inspiration, see our original fluffy buttermilk pancakes. If you want to make pancakes with milk, I highly recommend these easy fluffy pancakes.

    Key Ingredients

    • Banana: I use 1 large banana and mash it with a fork in the bottom of my mixing bowl. The riper your banana, the better these pancakes will taste. This recipe is perfect for those brown, speckly bananas sitting on your counter (the same goes for our banana bread and these banana muffins).
    • Buttermilk: This adds a lovely tangy flavor to our pancakes, which is incredibly delicious, especially when combined with something sweet (like maple syrup). If you don’t have buttermilk, you can still make these pancakes. See my tips for an easy buttermilk substitute below the recipe (it’s a mixture of milk and vinegar or lemon juice).
    • Flour: I use all-purpose flour, but whole wheat, spelt, or even your favorite gluten-free flour blend will work in this recipe.
    • Baking Soda and Baking Powder: I use both for these easy pancakes. The baking soda reacts with the acid in the buttermilk, and the baking powder adds a little extra lift for fluffiness. I do the same for these fluffy buttermilk pancakes.
    • Sugar, Spices, and Vanilla: These make our pancakes taste amazing. I love a little cinnamon and nutmeg in the batter, which goes so well with the banana.
    • Butter: I love buttery pancakes, so I’m generous with butter. I also cook my buttermilk banana pancakes in melted butter for crispy edges.

    What to Serve with Buttermilk Banana Pancakes

    Buttermilk pancakes are already one of the best breakfasts, but I’m in heaven when you turn them into banana buttermilk pancakes. I love topping mine with extra sliced bananas, chopped walnuts, and maple syrup. For something different, try whipped cream or dairy-free coconut cream (delicious!), easy apple butter, or some of our homemade pumpkin butter.

    Buttermilk Banana Pancakes

    These buttermilk banana pancakes with warm cinnamon and nutmeg are perfect on a sleepy morning. They come together quickly and taste incredible! If you do not have buttermilk, we have provided a note below sharing how to make buttermilk at home (all you need is dairy or non-dairy milk and an acid like white vinegar or lemon juice).

    Buttermilk tends to vary in thickness, so you might need more to achieve the right batter consistency. Our recipe below shares a visual cue to get it just right.

    Makes 10 pancakes

    You Will Need

    1 ½ cups (354ml) buttermilk, see tip for substitute

    3 tablespoons (42g) unsalted butter, plus more for skillet

    1 large banana, mashed, about 1/2 cup

    1 large egg

    1/2 teaspoon vanilla extract

    1 ½ cups (195g) all-purpose flour, see tips below for how to measure flour

    1 tablespoon sugar

    1 teaspoon baking powder

    1 teaspoon baking soda

    1/2 teaspoon ground cinnamon

    1/8 teaspoon finely grated nutmeg

    1/2 teaspoon fine sea or table salt

    Directions

      1If you do not have buttermilk and need to make a buttermilk substitute, do it now and set it aside.

      2Melt 3 tablespoons of butter, and then set aside.

      3In a medium bowl, mash the banana into a paste, and then whisk in the buttermilk, egg, vanilla extract, and melted butter. (Don’t worry if the butter solidifies slightly).

      4In a large bowl, whisk the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt together until well blended.

      5Create a well in the center of your dry ingredients. Pour in the banana buttermilk mixture and stir gently with a fork until the flour is just incorporated. A few small lumps are okay.

      6When you lift the whisk or fork from the batter, it should slowly run back into the bowl. If this does not happen and the batter is too thick, add an extra splash of buttermilk.

      7Place a large skillet or griddle over medium heat. Sprinkle in a few drops of water to test if it’s ready. You want them to dance around a bit and evaporate.

      8Brush the skillet with melted butter (this creates crispy edges, but you can skip it if using a quality nonstick pan).

      9Scoop the batter onto the skillet using a 1/4 cup measure or large cookie scoop, and spread each pancake into a 4-inch circle.

      10After 1 to 2 minutes, the edges will look dry, and bubbles will form and pop on the surface. Flip the pancakes and cook for another 1 to 2 minutes until lightly browned and cooked in the middle.

    • Storing
    • 1Store buttermilk banana pancakes in an airtight container in the fridge for up to a week or freeze them for up to 2 months. If freezing, line the pancakes on a baking sheet and freeze for about 30 minutes. Then, transfer them to a freezer-safe bag with parchment paper between each pancake to prevent sticking.

      2To reheat them, place them on a microwave-safe plate and cook for 20 seconds per pancake (add more time for multiple pancakes). Or wrap the pancakes in foil and bake at 350°F for about 10 minutes.

    • Buttermilk substitute: Combine 1 ½ cups of milk (dairy or non-dairy) with 1 ½ tablespoons of white vinegar or fresh lemon juice. Set aside for 10 minutes before using the recipe above.
    • Measuring flour: Fluff the flour in its container, then gently scoop it into your measuring cup until slightly mounded. Level off the top with a knife for accurate measuring. For even more accuracy, use a scale and measure the flour by weight (in grams).

    This green goddess dressing recipe uses two cups of fresh herbs! It’s fantastic for salads, roasted vegetables, fish, meats, and also makes a great veggie dip.

    Green Goddess Dressing

    Green goddess dressing is a delicious creamy dressing made with lots of fresh green herbs. Make it once, and you’ll be wanting a jar of it in your fridge from here on out.

    It’s wonderful tossed with greens, spooned over roasted vegetables, served as a sauce for meats and seafood, or set out as a dip with fresh vegetables. When I have lots of fresh herbs on hand, I jump at the chance to make this creamy green goddess dressing!

    Key Ingredients

    • Fresh Herbs: I use roughly 2 cups of fresh herbs, almost half of which is parsley. We love the combo of parsley, basil, chives, and a smaller amount of tarragon (it’s stronger!), but feel free to add cilantro, mint, dill, or scallions, too.
    • Mayonnaise and Sour Cream: Mayonnaise forms the base of our dressing, but I mix in some sour cream to lighten it up a bit (I do the same when making ranch). If you don’t have sour cream, Greek yogurt or buttermilk work well. For a vegan dressing, try my homemade vegan mayo, cashew cream, or this homemade tahini, and skip the sour cream.
    • Anchovies: Anchovies add a salty kick that salt alone can’t match! If you don’t eat fish, substitute with chopped capers.
    • Lemon and Vinegar: Fresh lemon juice adds brightness, and a splash of rice wine vinegar really makes this herb dressing pop (optional, but yummy!).

    How to Make Green Goddess Dressing

    Tip 1: Use a food processor or blender. I take a moment to get out my food processor for this recipe since it does such a great job of blending all those fresh herbs. If you don’t have a blender, you can always finely mince the herbs and anchovies, then mix them into the mayo and sour cream.

    Tip 2: Taste, and season well. Before serving your dressing, give it a taste. If it isn’t popping for you, it probably needs more salt and lemon juice. If it’s too thick, thin it with a bit of water, milk, or buttermilk.

    2 to 3 anchovy fillets or substitute 1 tablespoon capers

    ¾ cup packed fresh parsley leaves and tender stems

    ½ cup packed fresh basil leaves

    2 tablespoons fresh tarragon leaves or 2 teaspoons dried tarragon

    ¼ cup chopped chives cut into 1-inch pieces or substitute scallions

    2 tablespoons fresh lemon juice

    1 tablespoon rice wine vinegar, optional, adds extra tanginess

    ¼ to ½ teaspoon fine sea salt

    ½ teaspoon fresh ground black pepper

    Directions

      1Add mayonnaise, sour cream, 2 anchovy fillets, parsley, basil, tarragon, chives, lemon juice, vinegar, salt, and pepper to the bowl of a food processor or blender. Process, stopping and scraping down the sides a few times until the dressing is well blended.

      2Taste the dressing. If it needs a bit more pop, add the last anchovy and an extra squeeze of lemon juice. If the dressing is too thick, thin it out with a little water, milk or buttermilk.

    • Vegan green goddess dressing: Use 1 ⅓ cups vegan mayonnaise or cashew cream instead of the regular mayonnaise and sour cream, and then use 1 tablespoon of capers instead of the anchovy fillets. You may need to play around with a little more lemon juice or herbs to get the flavors just right.
    • Avocado variation: Avocado adds a creamy element to the dressing. Add the flesh from one medium avocado.
    • To make this by hand: Finely chop all the herbs and anchovies, then stir into the rest of the ingredients.

    Homemade BBQ Sauce

    This quick BBQ sauce is a delicious blend of Kansas City and Memphis styles, offering the best of both worlds. It’s slightly thicker than tangy Memphis style BBQ sauce but not as sugary sweet as the classic Kansas City version.

    Our recipe is the perfect DIY replacement for those store-bought bottles. It tastes better, and after looking at a few store-bought nutrition labels, this homemade version has significantly less sugar added, with more flavor! I use this sauce for our oven-baked beef ribs, and love it.

    Key Ingredients

    • Ketchup: We recommend using organic or natural ketchup for a thicker, less sweet sauce. Homemade ketchup also works!
    • Brown Sugar and Molasses: These add a rich sweetness to the sauce. I love how the molasses adds a richer flavor than brown sugar alone.
    • Pineapple Juice: Until testing this recipe, we had never used pineapple juice in barbecue sauce. But after tasting the sauce, we are sold! It’s sweet and tart. I love it! Look for pineapple juice with no sugar added.
    • Worcestershire or Pickapepper Sauce: You can use either, but my favorite is Pickapepper sauce. If you’ve not heard of it before, you’ll find it near the condiments and where Worcestershire is sold. Pickapepper is a little thinner, slightly sweeter, and more aromatic than more savory Worcestershire. It’s also vegan, so if you hope to make a vegan BBQ sauce, use Pickapepper.
    • Apple Cider Vinegar: I love tangy BBQ sauces, so we add some apple cider vinegar to balance the sweetness from ketchup, brown sugar, molasses, and pineapple juice.
    • Spices: You probably already have most (if not all) of the spices you need in your kitchen. We add smoked paprika, mustard powder (or mustard, see our tips section), garlic powder, onion powder, and ground turmeric. For spice, which is optional, add cayenne pepper or Aleppo pepper.

    How to Make the Best BBQ Sauce

    Tip 1: This sauce takes minutes to make. If you can add ingredients to a saucepan, you can make this easy BBQ sauce. Once you make it, try it slathered onto these tender baked ribs or stir it into our oven pulled pork (amazing!).

    Simply whisk everything together in a saucepan until it bubbles. Once it bubbles, reduce the heat and cover for 8 minutes. Then uncover the sauce and transfer it to jars so its ready for your next meal.

    Tip 2: Let it sit. At first taste, you might find the sauce too sweet or vinegary, but as it sits in the fridge, the flavors will bloom and become one. I love this sauce immediately, but it gets even better after an hour or two if you can wait.

It’s made with pantry staples like ketchup, brown sugar, and cider vinegar and is ready in under 20 minutes. Store it in an airtight container in the fridge for up to 1 month!

    Makes 3 cups

    You Will Need

    1 ½ cups (390g) ketchup, see tips

    5 tablespoons (65g) packed light brown sugar

    1 tablespoon molasses

    6 ounces (177ml) pineapple juice with no added sugar (3/4 cup)

    2 tablespoons Worcestershire sauce or Pickapepper sauce, see tips

    2 tablespoons apple cider vinegar

    1 tablespoon plus 1/4 teaspoon smoked paprika

    2 teaspoons mustard powder, like Coleman’s, see tips

    1 ½ teaspoons garlic powder

    1 teaspoon onion powder

    1/8 teaspoon ground turmeric

    1/4 teaspoon fine sea salt

    1 teaspoon fresh ground black pepper

    1/4 teaspoon Aleppo pepper or cayenne pepper, optional for heat

    Directions

      1Whisk all the ingredients in a medium saucepan over medium-low heat. Continue to whisk as you bring the sauce to a simmer. Since the saucepan is over lower heat, this will take a few minutes, but keeping the heat low prevents the sugars in the sauce from scorching.

      2Once the BBQ sauce bubbles, cover the saucepan with its lid and reduce the heat to the lowest flame or setting. Leave the sauce covered for 8 minutes.

      3Transfer to jars and let cool. Keep refrigerated for up to one month.

      4At first, this homemade barbecue sauce tastes sweeter and vinegary. However, after it has cooled, the flavors mellow a little, and the sauce becomes one.

    • Ketchup: This sauce is best when made with thicker varieties of ketchup with no high fructose corn syrup added. You can use homemade ketchup, or we have found that organic or natural options like Hunt’s 100% Natural or Heinz Simply work nicely in this recipe.
    • Pickapepper and Worcestershire sauce: These umami-rich condiments are used as seasonings in soups, stews, and sauces. Pickapepper is a little thinner and a bit sweeter than the more savory Worcestershire, but in most circumstances, they are interchangeable. As a bonus, Pickapeppa sauce is naturally vegan, so if you want to make vegan barbecue sauce, Pickapepper is the right choice.BBQ Sauce Ingredients: Worcestershire Sauce vs. Pickapepper Sauce
    • Dry mustard: Coleman’s dry mustard is excellent here, but you can substitute it with other mustard powders, such as prepared Coleman’s mustard or Dijon mustard. When substituting prepared mustard for dry, you will need a bit more. Start with one tablespoon of prepared mustard and go from there.
    • Making BBQ sauce on the grill: You can also make this BBQ sauce on the grill. Be mindful of the hotter areas of your grill. Keep the sauce over the coolest, most indirect heat so the sugars don’t burn.

    Perfect Asparagus Soup Recipe

    This incredible asparagus soup recipe turns out perfectly silky and creamy, and that’s without cream. We blend asparagus, potatoes, and a simple homemade broth. It’s healthy, super satisfying, and vegetarian!

    Creamy Asparagus Soup

    This asparagus soup is pure Spring in a bowl, and honestly, it’s one of my favorite ways to cook with asparagus! It’s light on calories but big on flavor. Don’t get me wrong, I love a rich, creamy soup, but sometimes you just want something a little lighter. That’s where this recipe comes in. Substituting potatoes for cream thickens the soup and adds a silky texture without any heaviness. I use this trick in our creamy vegetable soup and broccoli cheddar soup, too!

    This soup is also resourceful! We use the parts of asparagus and leeks that usually get tossed (like the tough ends and dark green tops) to make a really flavorful broth.     Key Ingredients

    • Asparagus: When shopping, look for bright green asparagus spears with tightly closed tips. A little purple on the tips is also a good thing. Skip any asparagus that looks dull, yellow, or has open, flowery tips. They should also feel firm and snap when bent. If they’re limp or bendy, they’re past their prime.
    • Leeks: Leeks are like onions, but taste a bit more sweet and delicate. We’ll use the white and light green parts in the soup, and save the dark green tops for our broth. To clean them, just trim off the root and dark green tops, slice the leek lengthwise, and rinse well under running water to get rid of any grit hiding inside.     • Carrot: Just one carrot brings a little sweetness and a bit of color to the broth.
    • Garlic: I like to use garlic in both the broth and the soup for extra flavor.
    • Potatoes: Here’s the secret to that creamy texture! No cream needed. Just potatoes (russet or Yukon Gold work great) to give this soup body and silkiness.
    • Spinach: Toss in a few handfuls of baby spinach at the end for a bit more green and a little extra nutrition.
    • Lemon: A squeeze of fresh lemon juice on top is my favorite finishing touch. It makes all the flavors pop!
    • Cheese (optional): We used parmesan in the photos, but feta or a spoonful of ricotta or mascarpone is amazing too.

    How to Make Asparagus Soup

    Tip 1: Make the asparagus broth. My favorite part about this soup recipe is that the base is a broth made with ingredients you would normally just toss in the trash. For this asparagus soup, combine the trimmed ends of the asparagus, dark green tops of the leeks, a carrot, a garlic clove, a bay leaf, salt, and pepper in a pot. Cover with water (or a light chicken broth), then simmer for about 25 minutes.

    Tip 2: Cook the leeks until soft. Whenever you use leeks, you really want to cook them long enough for them to soften and sweeten. We do this in a bit of olive oil in a Dutch oven, then build our soup from there. I cook my leeks the same way when making potato leek soup.

    Tip 3: Add potatoes. Once your leeks are soft and sweet, stir in garlic and potatoes. Then, pour in some of that asparagus broth from earlier. Let everything simmer until the potatoes are soft (about 20 minutes).

    Tip 4: Finish with the asparagus and spinach. The asparagus does not need much time to cook, so we wait until the potatoes are soft before adding it. When they are tender and bright green, we take the soup off of the heat and then stir in spinach. This adds flavor and nutrition, but most importantly, it makes our soup a bit greener.

    Tip 5: Blend and thin as needed. I usually use my immersion blender right in the soup pot, but for a completely smooth soup, transfer to a stand blender and blend. Depending on how thick you’d like the soup, you can thin it with a bit more of the asparagus broth. Then season to taste and serve.

    Perfect Asparagus Soup

    This simple asparagus soup is delicious, vegetarian, and minimizes waste. Instead of using stock to make the soup, we make a quick asparagus broth using the asparagus and leek trimmings. The broth is delicate and fragrant and is the perfect way to make use of trimmings instead of throwing them away.

    You Will Need

    2 pounds asparagus (907 g)

    1 large leek

    1 medium carrot

    2 garlic cloves, gently smashed

    1 bay leaf

    2 tablespoons extra-virgin olive oil

    2 medium russet potatoes, peeled and diced, about 1 pound (450 g)

    3 cups baby spinach, about 4 ounces (113 g)

    Half of a lemon, cut into wedges

    Salt and fresh ground black pepper

    Parmesan cheese, feta, ricotta, or mascarpone for garnish, optional

    Directions

    • Make Asparagus Broth
    • 1Trim the dry, woody bottoms of the asparagus. To find where to trim, bend the stalks until they naturally snap. Cut or snap at that point. Save the tops for the soup and add the stems to a large pot.

      2Cut the dark green tops from the leek and rinse them well to remove any grit. Add these to the pot with the asparagus stems. Rinse the leek’s lighter green and white parts and set them aside.

      3Add the carrot, smashed garlic clove, bay leaf, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper to the pot. Cover with 9 cups of water and bring to a boil. Reduce the heat, cover, and simmer for 25 minutes. Season to taste with salt, adding a little at a time until you can taste the broth’s flavors without it being overly salty. Strain the broth and reserve the garlic cloves.

    • Make Asparagus Soup
    • 1Thinly slice the reserved white and light green parts of the leek.

      2Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the sliced leeks and 1/4 teaspoon of salt. Cook, stirring often, until softened and fragrant, about 5 minutes.

      3Stir in the reserved garlic cloves and cook for one more minute. Add the potatoes and 6 cups of the asparagus broth (save the rest for thinning later). Bring to a boil, then reduce heat and simmer, covered, until the potatoes are very tender, about 20 minutes.

      4Meanwhile, cut the tips from 12 asparagus spears measuring about 1 ½ inches from the top. Set these aside for garnish. Roughly chop the remaining asparagus.

      5Once the potatoes are tender, stir in the chopped asparagus (not the reserved tips) and simmer until tender-crisp and bright green.

      6Remove from the heat and stir in the spinach until wilted but still bright green, about 1 minute. Blend the soup until smooth using an immersion blender (or a regular blender in batches).

      7Taste and season with more salt and pepper as needed. If the soup is too thick, thin it with the reserved asparagus broth, 1/4 cup at a time.

      8Just before serving, cook the reserved asparagus tips in boiling salted water until tender-crisp and bright green (about 3 minutes). Rinse with cold water to stop the cooking.

      9Ladle the soup into bowls and garnish with the asparagus tips and cheese (optional). Serve with a lemon wedge for squeezing over the top.

    • Storing: The soup’s bright green color may dull slightly over time, but you can store this in an airtight container in the fridge for up to 4 days.
    • Blending the soup: I use an immersion blender. If you use a stand blender, remember to blend in batches. If your soup is hot while blending, you want to remove the lid’s center insert and cover it with a kitchen towel while blending, helping some of the steam release and preventing the lid from popping off (which can be a big, hot mess).
    • Leftover broth: Use it in other soups to cook rice or grains or make risotto.
