Roasted Veggie Grain Bowl with Balsamic Dressing Recipe

The BEST Grain Bowl! Roasted root vegetables, earthy grains, dried fruit, dark leafy greens, buttery goat cheese, and lusciously creamy balsamic dressing.

I Love a Good Grain Bowl.

What’s colorful and nutritious and playful and makes your tastebuds feel very alive? This bowl.

Roasted root vegetables, earthy grains, and dried fruit. Dark leafy greens, buttery goat cheese, and lusciously creamy balsamic dressing.

    This grain bowl is:

    • really delicious
    • colorful
    • packed with nutrition
    • calorie-dense (in a good way)
    • super satisfying
    • adaptable (pick and choose your favorite roasted vegetables)
    • really good with or without protein
    • playful

    A) Yes, it’s a slice of healthy eating heaven, and B) this is the salad / bowl situation you want gracing the shelves of your fridge this winter.

Like, for days. Because you can meal-prep it! THANK YOU GRAIN BOWLS for knowing what we need.

How To Make These Grain Bowls

We’re working with just three steps here. THREE STEPS.

    1. Roast The Vegetables: Sweet potatoes and beets in the oven for 30 minutes. Done!
    2. Cook the Rice: I’d start this right away since wild rice can take some time.
    3. Make The Dressing: I like to blend this dressing so that it gets super smooth and almost creamy. Delicious!

Once you have all your elements ready to go, all you need to do is assemble in bowls.

    How To Meal Prep This

One of the best things about these grain bowls is that they can stand up to some fridge time. Here’s how I like to store this for meal prep:

    • Keep the kale, goat cheese, and pistachios separate to maintain their freshness.
    • The roasted vegetables, wild rice, and dried cherries can sit tight in a little bit of balsamic dressing while it’s in the fridge and kinda just keeps getting better and better.

When you’re ready to eat, combine it all together and add a little more dressing to coat the greens. Meal prep superstar!

More Ideas For This Grain Bowl

This grain bowl is as versatile as it gets.

Eat it warm or cold. Eat it on its own for lunch, or add a fried egg for a breakfast hash situation (gah!), or top it with some grilled chicken or pan-fried halloumi (omg yum) for dinner. Use a different dressing, or make the balsamic dressing and put it all over everything.

Don’t have wild rice? Swap in quinoa, farro, or your favorite grain.

Don’t have the patience to roast beets? Get pre-cooked ones at the store.

Don’t LIKE beets? Sub in another favorite roasted vegetable.

Hate pistachios and/or goat cheese? Any nut/seed or crumbly cheese will work.

However you do it, this rainbowy grain bowl has totally got your back.

Frequently Asked Questions About This Recipe

Yep! Swap in quinoa, farro, or your favorite grain.

What other vegetables could I use?

Roasted carrots, cauliflower, and/or brussels sprouts would work great here.

What other cheese could I use?

How can I add protein to this?

This would be perfect with some chicken (grilled, roasted, air-fried) or some chickpeas for a vegetarian-friendly option.

Yes! Skip the cheese and skip the mayonnaise.

    Reason You’ll Love This Recipe

    • Bold & Flavorful: You will love the combination of cajun spices, creaminess, and flaky crab for the perfect kick.
    • Quick & Easy: Simple ingredients and just 5 minutes of prep make this Cajun crab dip a breeze to whip up.
    • Crowd-Pleaser: Always a hit at parties, game days, and gatherings. Pair it with other fun appetizers like my bacon crackers, kielbasa bites, and stuffed mushrooms.

How to Make Cajun Crab Dip

This Cajun crab dip is one of the easiest, most flavorful appetizers you can make! Just mix a few simple ingredients, chill or bake, and it’s ready to serve. If you love crab dips, you’ll also want to try my Crab Rangoon Dip!

    1. Make the Creamy Base: Add the cream cheese, mayo, and sour cream to a large bowl and beat with a hand mixer until smooth.
    2. Mix in the Flavorings: Add the green onion, lemon juice, Cajun seasoning, hot sauce, and Worcestershire sauce and mix until combined.
    3. Stir in the Crab and Serve: Add the drained crab and mix until combined. Taste and add more Cajun seasoning or hot sauce if you want it spicier and to your preference. Transfer to a serving bowl, then serve with your choice of crackers or crusty bread.

Cajun Crab Dip Tips and Variations

This delicious seafood dip is super easy to switch up and make it how you like. Here are some ideas to get you started.

    • Use Room Temp Cream Cheese! I highly recommend you use room-temperature cream cheese for the smoothest, creamiest dip. I like to set it on the counter for up to 2 hours before I prepare the dip to allow it to soften.
    • How well do I need to drain the crab? Drain the crab very well! Otherwise, the dip may end up soupy. I used the lid of the can to press down on the crab while it was still in the can until no more liquid would come out. If it’s still dripping liquid when you squeeze it, it’s not drained well enough!
    • Can I Use Imitation Crab Meat? You can substitute canned crab for imitation crab if you would like! Shred it well, chop it into fine pieces, and use it in place of the canned crab.
    • Make it spicy! Add more hot sauce to spice up the cajun crab dip to your liking.

How to Store Leftover Crab Dip

Cajun crab dip stores beautifully, making it perfect for enjoying over several days. The flavors meld together even more over time, so this easy appetizer will taste even better the next day!

    • In the Refrigerator: Store in the fridge in an airtight container or covered tightly with plastic wrap for up to 5 days.
    • Make Ahead: You can prepare this cajun crab dip beforehand, as long as it is served and discarded after the 5th day.

This website may contain affiliate links and advertising so that we can provide recipes to you. Read my disclosure policy.

Bourbon shrimp are sticky, garlicky, and packed with flavor. Sweet brown sugar and a splash of bourbon create a quick, glossy glaze that makes this appetizer (or weeknight dinner!) totally irresistible.

Bowl of bourbon shrimp on a bed of rice. Bowl of bourbon shrimp on a bed of rice.

Why You’ll Fall in Love with Every Bite

    • Signature Bourbon Flavor: If you loved the chicken version, this shrimp delivers the same sweet-savory bourbon flavor, caramelized in the skillet for a glossy, bourbon-kissed bite.
    • Brown Sugar Over Honey: I skip honey and use brown sugar for a richer caramel flavor that pairs better with bourbon.
    • Cornstarch for the Perfect Coat: I use a little cornstarch to thicken the sauce just enough so it clings to the shrimp!

    Ingredients for Bourbon Shrimp

Overhead shot of labeled ingredients.Overhead shot of labeled ingredients.
    • Bourbon Substitute: If you don’t have bourbon or don’t want to use bourbon, then you can use apple cider instead!
    • Alcohol Cooks Off: The bourbon’s alcohol evaporates while cooking, leaving a rich flavor and making it kid-safe.
    • Tails Optional: Keep tails on for appetizers; remove them for an entrée.
    • Serving Options: Serve the bourbon shrimp as a party appetizer, pile it over rice or noodles for dinner, or tuck it into lettuce wraps.

    How to Make Bourbon Shrimp

This recipe is super simple! Whisk together the marinade, let the shrimp soak up all those flavors, and then cook them quickly in a hot skillet. You’ll love how easy it is to get restaurant-quality shrimp right at home!

    1. Marinate in the Sauce: Add bourbon, soy sauce, brown sugar, and minced garlic to a large ziplock bag. Close the bag and mash it around to combine. Add peeled and deveined shrimp, then refrigerate to marinate for 30 minutes to an hour.
    2. Cook: Heat a large 14-inch skillet over medium-high heat. Remove the shrimp from the bag and reserve the marinade. Add the shrimp to the pan and cook on both sides for about 2 minutes, until they are pink and cooked through. Do NOT overcook. Remove the cooked shrimp to a plate.
    3. Simmer the Sauce: Add the marinade to the skillet and bring to a boil. Meanwhile, combine cornstarch and water in a small bowl to make a slurry.
    4. Thicken and Coat Shrimp: Add the slurry to the skillet and whisk to combine. Reduce the heat to medium and continue to simmer for 3-4 minutes, until the sauce thickens. Add the shrimp back to the skillet, then toss to coat in the sauce. Turn off the heat, then garnish the bourbon shrimp with sliced green onions and serve immediately.

    Alyssa’s Pro Tip

Marinate Carefully: Shrimp are delicate, and too much time in an acidic marinade can turn them rubbery. Aim for 30 minutes; one hour max.

Trader Joe’s Chicken Shawarma + Lemon Rice Is a Thing To Behold

    Lindsay Ostrom headshot.

Do you guys know Naf Naf grill? This is a Naf Naf bowl, made at home! Using TJ’s chicken shawarma! Lots going on here!

This bowl is a power combo. It’s loaded with:

    • Lemon rice (lightly scented, fluffy, and gorgeous)
    • Crisped, golden chicken shawarma
    • Cabbage slaw that’s almost pickled
    • A tangy, creamy feta cucumber sauce

I am a huge fan of shortcuts cheesy smile so I am regularly using the chicken shawarma from Trader Joe’s for these bowls.

If you’re looking for the fastest possible path to a meal, just make the chicken and lemon rice, and pile on some store-bought tzatziki and/or fresh cucumbers! The chicken and lemon rice make such a solid base.

And if you’ve got it in you to make the cabbage and feta cucumbers, you’re in for a big big treat.

The first time I made this, I knew it would end up as a recipe on the blog. And then when I made it for a final test with my friend Amanda, we were just losing our minds. This combo is just SO GOOD.

Lindsay and Amanda with chicken shawarma bowls.

Amanda actually pointed out that the leftovers would also be amazing in a wrap?! and now I can’t get that out of my mind. Can someone make that happen?

Hope you guys love it. Cheers to shortcuts! And feel-good food!

    Chicken Shawarma:

    Lemon Rice:

    Cabbage Salad:

    Feta Cucumber Sauce:

    Instructions

    1. Make Lemon Rice: Sauté rice, onion powder, garlic powder, and salt. Add bouillon and water; bring to a simmer. Cover the pot, and keep it on a very low simmer for 18 minutes. When it’s done, add lemon zest; fluff with a fork.
    2. Toss Cabbage Salad: Toss together cabbage, white vinegar, water, olive oil, salt, and sugar; taste and adjust. Let it rest while you finish up.
    3. Make Feta Cucumber Sauce: Stir together grated cucumber, Greek yogurt, olive oil or mayo, feta cheese, garlic, and dill; taste and adjust.
    4. Air Fry Chicken Shawarma: I do this last so it’s hot and fresh! Air fry the chicken at 390 for 9-10 minutes, until 165 degrees and deeply browned on the outside. (You can also cook the chicken on a sheet pan in the oven – 450 for 5 minutes, and then broil on low for 5 more minutes). Chop into bite-sized pieces.
    5. Serve: Plate rice with the chopped chicken shawarma, a scoop of the cabbage, and a dollop of the feta cucumbers.

Frequently Asked Questions For This Chicken Shawarma

If I don’t have access to Trader Joe’s, how should I make the chicken?

I love the marinade used in this chicken pitas recipe and it would be a great fit here as well!

    Can you use store-bought tzatziki?

Yes! And you can get tzatziki from Trader Joe’s as well!

    Can I make this vegan?

Replace the chicken with something plant-based, like: falafel (from Trader Joe’s too!), marinated chickpeas, air fryer tofu, or roasted veggies. Trader Joe’s also sells a vegan tzatziki that’s fantastic!

    How long do leftovers last?

This will keep for 3-4 days as leftovers! I like to keep all the ingredients separate so I can still warm the chicken and rice before adding the cabbage and sauce. Just a heads up that the cabbage will pickle more as it sits!

How to Make Crab Stuffed Mushrooms

These adorable crab stuffed mushrooms are easy to prepare and taste absolutely amazing! Perfect for your next get-together, game day, or holiday celebration! Don’t have the energy to stuff mushrooms, but want that same flavor? Make my stuffed mushroom dip!

    1. Prep Mushrooms: Preheat the oven to 350 degrees Fahrenheit and either grease a sheet pan or line it with parchment paper. Clean and destem the mushrooms, discarding the stems or reserving them for a separate recipe. Place the mushroom caps top-side down on the sheet pan.
    2. Sauté: Add the butter to a small skillet and melt over medium heat. Add the shallot and garlic and cook for 1-2 minutes, until the shallots pale in color. Remove the shallot mixture from the heat and set aside in a small bowl.
    3. Beat Cream Cheese: Add the cream cheese to a large bowl and beat with a hand mixer until smooth. Add the egg yolk, parsley, paprika, and salt and beat until combined.
    4. Mix in Shallot Mixture: Add the crabmeat, parmesan cheese, and shallot mixture and mix until combined. At this stage, it will become very soft and wet.
    5. Transfer to a Bag: Beat in the panko, transfer the crab mixture to a large ziplock bag, and snip off the end of it.
    6. Fill Mushrooms and Bake: Squeeze the crab mixture into the centers of the mushrooms, letting it mound on top. Bake for 25 minutes or so, until the tops begin to brown. Serve crab stuffed mushrooms warm.

    Tips for Crab Stuffed Mushroom

Looking to elevate your crab stuffed mushrooms? Here are some helpful tips to ensure they turn out perfectly every time!

    • What kind of mushrooms should I use? I used white button mushrooms for this recipe, but you may use baby bella mushrooms (also called cremini mushrooms).
    • How do I avoid soggy crab stuffed mushrooms? Sometimes, stuffed mushrooms can end up soggy due to their high water content. Avoid this by partially baking the mushrooms before they are filled. Clean and destem the mushrooms and place them top down on a parchment or aluminum foil-lined baking sheet. Bake at 375 degrees Fahrenheit for about 15 minutes, until the mushrooms release their water and fill with liquid. Tip off the liquid and pat the mushrooms dry with paper towels then proceed to fill them with the crab mixture. Bake as directed. This can be done up to 24 hours before filling them with the crab.
    • Can I use Imitation Crab? I used canned lump crab meat for this filling. But you can use shredded and finely chopped imitation crab. Reduce the amount of panko breadcrumbs to ½ cup, only adding more if needed to absorb any excess liquid. Imitation crab has significantly less moisture than canned crab, so less panko will be needed.
    • How do I brown the tops better?  Sometimes, the tops of the mushrooms take a while to brown. You can turn the broiler to HIGH and broil for 2-3 minutes until the tops are a deep golden brown. Be sure to keep a close eye on them so they don’t burn!

Overhead shot of baked crab stuffed mushrooms on a serving plate. Overhead shot of baked crab stuffed mushrooms on a serving plate.

    Make Ahead Instructions

    • Prepare Ahead: These crab stuffed mushrooms are great for preparing ahead of time! You can prepare them all the way through step 8 up to 24 hours in advance. Place the filled mushrooms in an airtight container lined with 1-2 paper towels on the bottom. This prevents them from rolling around as well as absorbing any excess moisture. Store in the refrigerator until you are ready to bake them. Give the mushrooms an additional 5-8 minutes or so to bake since they will be chilled and will need more time to cook through.
    • Storing Leftovers: These are best served fresh, so I don’t recommend storing leftovers. If you do end up storing them, keep them in an airtight container in the fridge for 2-3 days. Reheat in the oven at 350 degrees Fahrenheit for 10-15 minutes or in the air fryer at 370 degrees Fahrenheit for 4-5 minutes.

Sausage, Cheddar and Guinness Pie Recipe

    • PREP
    • COOK
    • TOTAL

This stout pie is delicious made covered with pastry, but you can just as easily skip the pastry and serve the sausages over mashed potatoes instead.

    Makes approximately 6 servings

    You Will Need

    1 tablespoon olive oil

    6 bratwurst sausages

1 medium onion, sliced into 1/4-inch half moons

3 medium carrots, cut into 1/4-inch rounds

    3 cloves garlic, minced

    1 tablespoon butter

    1 heaping tablespoon flour

    1 cup beef stock

1 cup Guinness Stout beer (about 3/4 bottle)

1 cup grated sharp cheddar cheese

Salt and fresh ground black pepper

    Pastry Topping

    1 large egg

    1 tablespoon water or milk

1/4 cup grated sharp cheddar cheese

1 (9-inch) pie crust, see our homemade pie crust recipe

    Directions

    • Make Filling
    • 1Heat oven to 375 degrees F.

2Heat oil in a large deep pot over medium heat. Add the sausages and brown on all sides. Transfer sausages to a plate, and then add the onions and carrots to the pot. Cook, stirring occasionally, until the onions begin to soften, about 5 minutes. Stir in the garlic.

3Add the butter and flour then cook, stirring constantly for one minute until the flour has been absorbed and darkens in color. Stir in the stock and beer. Bring to a simmer then add sausages back into the pot. Simmer, uncovered, until the sausages are cooked through, about 8 minutes.

4Remove the sausages and slice into 1/2-inch rounds then add back to the pot. Stir 1 cup of cheese into the gravy. Taste for seasoning then adjust with salt and/or pepper.

    • To Finish
    • 1Make an egg wash by whisking the egg and water until blended.

2Spoon the filling into a 2-quart baking dish and brush the top and sides of baking dish with egg wash.

3Shape the pie crust so that it will cover the top of the baking dish. Top baking dish with crust. Brush the top of the crust with additional egg wash and top with the remaining 1/4 cup of cheese. Bake in the oven until the crust is golden brown on top, about 30 minutes.

    Adam and Joanne’s Tips

    • If you use store-bought dough, it will likely be in a circle. You may find that you need to use two circles of dough to cover the baking dish (depending on the shape of the dish). If you make your own homemade crust, just after making it, shape the dough into a similar shape as the baking dish you plan to use.

Detox Rainbow Roll-Ups with Peanut Sauce Recipe

Banner for gluten-free simple recipe ideas.

    Annnnd it’s Rainbow Roll-Up time!

If Rainbow Roll-Up doesn’t give you some association with a packaged, neon-colored fruit leather situation all wrapped up in a little paper coil, then who are you even? I’m having a moderately hard time separating these from the single greatest snack food of my childhood.

This is not that kind of rainbow roll-up, though. This is a rainbow roll-up that’s a nutritional powerhouse with foods like: carrots. chickpeas. curry. red cabbage. peanuts. dark leafy greens.

See, mom? I can eat like an adult after all.

How To Make Our Rainbow Roll-Ups:

    Detox Rainbow Roll-Ups.

These Rainbow Roll-Ups were inspired by these roll ups which are similarly detox-friendly and equally as delicious but a little lacking in the beautiful colors department. I actually made THOSE roll-ups for a blog post, but then realized: I think I’d like to make a new version of these, and I’d like to give it some more color and crunch.

And maybe a little curry hummus.

And maybe a little (LOT) of peanut sauce for dipping.

I’ve even been down the rainbow rolls path before with these Thai summer rolls, and these are a different but equally delicious version.

If I had to tell the story of my experience with Detox Rainbow Rolls in photos, it would go like this:

    Detox Rainbow Roll-Up.
Detox Rainbow Roll-Ups dipped in peanut sauce.
Detox Rainbow Roll-Ups dipped in peanut sauce.

And it would include one thousand heart-eye emojis.

That first bite? with the creamy, salty-sweet peanut sauce and the crunchy, cool veggies and the smear of thick, spicy curry hummus? Yes. It is every bit as satisfying as you’re imagining it.

Detox Rainbow Roll-Ups – with curry hummus and veggies in a collard leaf, dunked in peanut sauce! Most beautiful healthy desk lunch!

    Rainbow Roll-Ups:

    Peanut Sauce:

    1. Prep: Trim the stem/spine of the collard leaf – don’t cut it completely off, but just cut it down so that it’s nice and thin and pliable.
    2. Roll: Arrange your fillings on the collard leaf. Fold the ends in and roll from front to back, trying to keep everything in there nice and tight. Watch video for a visual example.
    3. Peanut Sauce: Run all the ingredients through a blender or food processor. Voila!

    Notes

You can steam the collard leaves if you want to make them more pliable. I also found that just running the leaf under hot water or placing hot rice on it was enough to soften it just a little bit. These aren’t the greatest for making ahead, since the hummus can get a little watery once it sits with the veggies. I recommend prepping everything and then keeping it in the fridge and rolling a fresh one each morning or just before you eat it. They will hold together nicely with toothpicks! For a completely sugar free version of this recipe, use white distilled vinegar.

  • Easy Brown Butter Recipe

    Easy Brown Butter Recipe

Here’s my method for how to brown butter perfectly every time. It takes 5 minutes, and you can use this brown butter in your favorite baking and savory recipes.

How to Brown Butter - Skillet with butter that has been browned to perfection. Brown butter looks light brown.

Brown butter is regular butter cooked a bit longer than usual until the milk solids toast and turn brown. You’ll cook the butter just past the melting point.

Browning butter creates a magical toasty flavor you don’t get with regular melted butter. Brown butter (or beurre noisette in France) tastes nutty, toasted, and like toasted hazelnuts.

    How to Use Brown Butter

Use brown butter in almost any recipe that calls for melted butter. Toss cooked pasta or noodles with browned butter, as we do for our brown butter pasta with egg and this kale pasta. I also love drizzling vegetables with brown butter before (or after) roasting them. It’s absolutely amazing when used to make mashed potatoes, and it makes the best popcorn!

For sweeter recipes, swap plain melted butter for brown butter in cookies, bars, and even buttercream (yes, you can chill the butter and whip it!). I love using brown butter to make chocolate chip cookies, oatmeal cookies, and blondies. It also makes these easy sautéed apples extra delicious, and I love drizzling it over oatmeal.

    Perfect Brown Butter

    Easy Brown Butter

It takes five minutes to make brown butter. You can use it almost anytime a recipe calls for melted butter (hello, brown butter chocolate chip cookies). For herb brown butter, add a handful of fresh sage leaves, rosemary sprigs, or fresh thyme to the pan while you make the brown butter.

    3/4 cup

    You Will Need

1 cup (227g) butter, salted or unsalted

    Directions

1Add butter to a heavy-bottomed pan over medium-low heat. As the butter melts, continuously swirl it around the pan. The butter will quickly go from brown to burnt, so stay close to the pan when you do this.

2Continue swirling the butter over the heat. It will melt, get a little foamy, and finally start turning golden brown. Remove it from the heat when the butter is light brown and smells nutty.

3Store brown butter in the fridge for up to two weeks or freeze for up to three months.

    Adam and Joanne’s Tips

    • Storing: Homemade brown butter lasts in an airtight container in the fridge for up to 2 weeks or frozen for up to 3 months. The butter will solidify again, but you can warm it over low heat when needed. To freeze brown butter, pour it into a clean ice cube tray, freeze, and then transfer the frozen cubes to a freezer-safe container or bag.
    • How to freeze brown butter: Pour it into a clean ice cube tray, freeze, and then transfer the frozen cubes to a freezer-safe container or bag. Freeze for up to 3 months. Gently reheat in a pan over low heat.
    • Nutrition facts are estimates. We assumed unsalted butter.

  • Easy Chicken Stir Fry Recipe

    Easy Chicken Stir Fry Recipe

This chicken stir fry recipe is packed with fresh vegetables and coated with our irresistible homemade sauce.

    Chicken stir fry with vegetables

I love stir fries, especially when I’m short on time. We’ve found ourselves returning to this recipe lately. The sauce is easy and made from scratch with honey, fish sauce, and soy sauce.

This stir fry can be on the table in about 30 minutes, and if you want to, you can make the stir fry sauce well in advance (it lasts in the fridge for a week).

    Key Ingredients

    • Chicken: I use boneless, skinless chicken thighs in this stir fry recipe, but boneless, skinless chicken breasts work well. Cut the chicken thighs into bite-sized pieces, or if you have chicken breasts, slice them against the grain into 1/4-inch slices.
    • Veggies: Use what you love, but when I make this recipe, I reach for broccoli, onion, bell pepper, and snow peas. The combination is hearty, flavorful, and colorful. Take note of the recipe directions, where I give the heartier veggies (like broccoli) a head start before adding the other vegetables to the skillet/wok.
    • Ginger and Garlic: I love fresh ginger and garlic, and use a tablespoon of each in this stir fry. If you don’t want to buy fresh ginger, look for the fresh ginger paste (sold in squeeze bottles).
    • Basil: One of my favorite Thai restaurants sells a stir-fried dish with lots of fresh basil and I love it, so I add fresh basil here. Use Italian basil or Thai basil. Mint is also an option.
    • Stir Fry Sauce: This homemade sauce is really easy and so flavorful. I combine honey, fish sauce, soy sauce, water (or broth), and cornstarch. The cornstarch thickens the sauce a bit, so it sticks to the chicken and vegetables in the stir fry. I also love this more traditional brown stir fry sauce.

Find the full recipe with measurements below.

How to Make the Best Chicken Stir Fry

Tip 1: A quick guide for making our chicken stir fry. This dish comes together really quickly. For the best results, you’ll want to cook your protein first, then follow up with the veggies. This way the chicken stays perfectly tender and the veggies don’t overcook. Here’s a quick rundown of what you’ll need to do:

    1. Cook the chicken first, then transfer it to a plate.
    2. Toss your broccoli into the pan. Since broccoli is heartier than the other veggies, I like giving it a head start so that by the time everything else is ready, it’s bright green and crisp-tender.
    3. After tossing the remaining veggies, I stir the garlic and ginger. Adding these later guarantees that they stay super fragrant and don’t burn.
    4. Add the chicken and sauce, then reheat everything.
    5. If you have some on hand, toss in some fresh herbs and lime juice. I love basil, but mint is great, too.

Tip 2: Serving suggestions. Thanks to all of the hearty veggies, this stir fry is lovely by itself. It’s also great with plain rice, coconut rice, fried rice, noodles or this cilantro lime rice.

    Chicken Stir Fry

    Easy Chicken Stir Fry

    • PREP
    • COOK
    • TOTAL

My family loves this easy chicken and vegetable stir fry. I use chicken thighs, but chicken breast, tofu, pork, or simply replacing the chicken with more vegetables are all options. The key to the best stir fry is to cook the heartiest ingredients first—like the chicken or broccoli, then add less hearty and more delicate ingredients towards the end of cooking. This way, none of the vegetables overcook. Use a nice wide skillet or wok for this recipe. The bigger, the better.

    Makes 4 servings

    You Will Need

    Chicken Stir Fry

1 ½ pounds boneless, skinless chicken thighs, cut into bite-size pieces

1 tablespoon avocado oil, peanut oil, or canola oil

2 cups broccoli florets (1 medium bunch)

    1 small onion, thinly sliced

1 bell pepper, core removed and thinly sliced

    1 ½ cups snow peas (3 ounces)

1 tablespoon minced fresh ginger (1-inch piece)

1 tablespoon minced garlic (3 cloves)

    1/4 cup fresh basil leaves

Juice of 1 lime, plus extra lime wedges for serving

    Stir Fry Sauce

    1 tablespoon honey

    2 tablespoons fish sauce

1 teaspoon low sodium soy sauce

1/3 cup water or chicken broth

    1 ½ teaspoons cornstarch

1/2 to 1 teaspoon Sriracha hot sauce

    Directions

1You can make the stir fry sauce up to one week in advance and keep it in an airtight container in the fridge. Whisk honey, fish sauce, soy sauce, water, and cornstarch in a small saucepan over medium-low heat. Continue to whisk as it heats up and thickens, 2 to 3 minutes. When thick and shiny, remove from the heat and stir in Sriracha hot sauce.

2Heat a large, wide skillet or wok over medium-high heat. Add the oil and swirl it in the pan until the bottom is well coated. Scatter the chicken pieces in one layer. Cook, without moving, until starting to brown on the bottom, about 5 minutes. Stir the chicken and continue to cook until cooked through about 3 minutes. Transfer the chicken to a clean plate.

3Reduce the heat to medium, then place the skillet back on the burner. Add the broccoli and cook, stirring frequently, until it turns bright green, about 2 minutes.

4Throw in the onion and bell pepper, and cook, stirring frequently, until the onions begin to sweat, about 2 minutes.

5Add the snow peas, ginger, and garlic, then cook, tossing frequently until the ginger and garlic are fragrant and the snow peas turn a brighter green, about 2 minutes.

6Stir in the cooked chicken. When all of the vegetables are crisp-tender and the chicken is reheated, take the skillet off the heat and stir in the stir-fry sauce. As you stir, use tongs or a spoon to scrape the bottom of the pan to lift any bits stuck to the pan and mix them into the sauce.

7Finish by tossing with fresh basil leaves and the juice of one lime. Serve with extra lime wedges.

    Adam and Joanne’s Tips

    • Chicken breasts: If you substitute chicken breasts in this recipe, slice them against the grain into 1/4-inch slices before cooking them so that they are super tender.
    • Buying fish sauce: We always keep a bottle of fish sauce in our kitchen. It’s truly a magical ingredient. You can use it here and in other Asian-inspired dishes, and it is also excellent for adding to soups, stews, and pasta sauces. We have Red Boat in our kitchen. It has a clean flavor and no water or sugar added. If you cannot find it, go for a mid to high-priced fish sauce sold in a glass bottle instead of in plastic, and look for a light amber or reddish color rather than a very dark color.

  • Baked Buffalo Chicken Dip Recipe

    Baked Buffalo Chicken Dip Recipe

This Buffalo chicken dip recipe is the perfect appetizer for game day or a crowd. Creamy, cheesy, and loaded with shredded chicken and tangy Buffalo sauce.

    Buffalo Chicken Dip

It bakes up hot and bubbly with a fondue-like cheese sauce and just the right amount of heat, thanks to Frank’s hot sauce. Everyone I’ve served it to loves it!

If you love Buffalo hot wings, this buffalo chicken dip is for you. It’s especially good served with crusty bread, sturdy crackers, or crisp veggies like carrots and celery.

    Key Ingredients

    • Chicken: I usually start with leftover roasted chicken or a store-bought rotisserie chicken. You can also use our stovetop shredded chicken, slow cooker shredded chicken, or poached chicken recipes.
    • Hot Sauce: Use your favorite brand. We love Frank’s RedHot or Crystal Hot Sauce for their flavor and mild heat. These are also what I use when making homemade Buffalo sauce.
    • Butter and Flour: These form the base of our creamy dip. They turn into a roux that thickens the milk (similar to making creamy mac and cheese).
    • Milk: I like the richness of whole milk, but 2% is fine.
    • Veggies: To add flavor to the dip, cook finely diced onion, carrot, and celery in butter with minced garlic.
    • Cheese: For a smooth, creamy dip, use a mix of cream cheese and a melty cheese such as white cheddar, Monterey Jack, or Pepper Jack for a little extra heat.

Find the full recipe with measurements below.

How to Make the Best Buffalo Chicken Dip

Tip 1: Make the creamy base. The base of this dip starts like a classic macaroni and cheese. Cook onion and celery in butter until soft, then stir in garlic and flour. Cook until the flour turns lightly golden, then whisk in the milk until it thickens into a smooth béchamel sauce.

Making the creamy base of buffalo dip

Tip 2: Make it cheesy. For the creamiest texture, stir in a bit of cream cheese. The stabilizers help the dip stay silky and smooth (just like in our queso recipe). Then add shredded cheese for flavor. I love white cheddar, but pepper jack adds a nice kick.

Tip 3: Make it Buffalo-style. To transform this from a creamy sauce to a Buffalo dip, stir in a generous amount of hot sauce. You can add to taste on this one, so you can make it as spicy as you want. When you are happy with the flavor, stir in your chicken.

Adding Frank's Redhot to homemade buffalo chicken dip

Tip 4: Bake it! Transfer the dip to a baking dish, sprinkle extra cheese on top, and broil until hot and bubbly. It only takes a few minutes, and that gooey, golden topping makes all the difference.

This Buffalo chicken dip recipe is easy to make and perfect served with crisp celery sticks and crusty bread. We love using Frank’s RedHot Original since it’s full of flavor without being too spicy, but feel free to use your favorite hot sauce. Just taste as you go, since some brands pack a bit more heat.

This dip is just as good with or without chicken. We’ve made it both ways, and it’s always a hit.

    8 Servings

    You Will Need

2 cups cooked, shredded chicken, see tips

    2 cups whole milk

    4 tablespoons unsalted butter

1 cup finely chopped onion (1 medium)

½ cup finely chopped celery (1 stalk)

    2 garlic cloves, minced

    4 tablespoons all-purpose flour

    3 ounces cream cheese, block-style

8 ounces sharp white cheddar, coarsely grated, about 2 cups

    Dash Worcestershire sauce

5 tablespoons Frank’s RedHot Original, or more to taste

Celery sticks and/or crusty bread, for serving

    Directions

1Warm the milk: Heat the milk in a medium saucepan over medium heat until it just begins to simmer. Turn off the heat and set aside. You can also warm it in the microwave.

2Cook the vegetables: Melt the butter in a large, heavy-bottomed saucepan over medium heat. Add the onion, celery, and ¼ teaspoon salt. Cook, stirring occasionally, until softened, about 5 minutes.

3Make the roux: Stir in the garlic and flour. Cook, whisking constantly, until the flour turns lightly golden, about 2 to 3 minutes. Remove from the heat.

4Add the milk: Slowly whisk in the warm milk a little at a time, whisking until smooth. Return the pan to medium heat and cook, whisking constantly, until the sauce thickens enough to coat the back of a spoon, about 2 minutes.

5Add cheese: Remove from the heat. Stir in the cream cheese and all but a small handful of the cheddar until melted and smooth.

6Add hot sauce and chicken: Add the Worcestershire sauce and 5 tablespoons of hot sauce. Taste and adjust the spice and salt as needed. Stir in the shredded chicken.

7Broil and serve: Position a rack 6 inches from the broiler and preheat the broiler to high. Transfer the dip to a 2-quart baking dish and sprinkle the remaining cheese on top. Place the dish on a foil-lined baking sheet and broil until bubbling and lightly browned, about 2 to 3 minutes. Serve hot with celery sticks, or slices of crusty bread.

    Adam and Joanne’s Tips

    • Make ahead: You can prepare this up to 3 days in advance. Follow our recipe directions, but do not broil. Store the dip covered in the refrigerator until ready to serve. Gently reheat the dip in a saucepan over medium-low heat until thoroughly heated through. Pour the dip into the baking dish, add extra cheese on top, and broil until the top is bubbling and cheese begins to brown.
