It’s similar to our chicken noodle soup, but with even more vegetables and a few slices of lemon added to brighten the flavor. I can’t wait for you to try it!

  • Chicken: Use leftover or rotisserie chicken, or cook chicken specifically for this soup. I’ve included instructions for easy roasted chicken thighs in the recipe, which I love chopping up and stirring in.
  • Vegetables: I use five veggies in this chicken soup. You’ll find onion, carrots, fennel, zucchini, and kale. Feel free to add more if you have them on hand.
  • Herbs and Spices: Garlic, thyme (or rosemary), a bay leaf, and a touch of ground turmeric add flavor and a beautiful golden color to the broth.
  • Broth: Use your favorite store-bought chicken or vegetable broth. Bone broth is another great option and adds extra protein. For homemade options, try our chicken broth, bone broth, or vegetable broth recipes.
  • Pasta: I love a small amount of pasta. It’s optional, but adding just under a cup of dry pasta to the pot makes the soup hearty and dinner-worthy. Potatoes would do the same!

How to Make the Best Chicken Vegetable Soup

Tip 1: Start with flavorful chicken. If you don’t already have leftover cooked chicken, bake a few chicken thighs with herbs in the oven. Roast them at 400°F until cooked through. This method keeps the chicken juicy and adds a lot of flavor. You can even pour a little of the roasting juices into the soup for extra richness.

Tip 2: Cook the hearty veggies first. This soup comes together in two stages. Start by cooking the onion, carrot, and fennel until they’re soft and smell sweet. Then add the garlic, herbs, and broth, and let everything simmer for about 20 minutes.

You Will Need

For the Chicken

1 ½ pounds skin-on chicken thighs (680g)

1 teaspoon olive oil

Salt and fresh ground pepper

4 sprigs fresh thyme or rosemary


For the Soup

1 ½ tablespoons olive oil

1 medium onion, chopped, about 1 cup

2 medium carrots, chopped, about 1 cup

1 medium fennel bulb, core removed and chopped, about 1 ¼ cups

2 cloves garlic, minced, 2 teaspoons

1 tablespoon chopped fresh thyme or rosemary

½ teaspoon turmeric

1 bay leaf

8 cups chicken broth or veggie broth (1.8L)

1 medium zucchini, chopped, about 1 cup

1 bunch kale, stems removed and chopped, about 4 cups chopped

¾ cup small dried pasta, like orecchiette or orzo

Sea salt and fresh ground black pepper

2 to 3 fresh lemon slices with seeds removed, optional

Grated parmesan cheese for serving, optional

Directions

  • Cook the Chicken
  • 1Preheat the oven to 400°F (204°C). Line a baking sheet with foil or parchment paper, or use a cast-iron pan.

    2Make a bed for the chicken by placing a few sprigs of fresh herbs on the pan. Rub the chicken with 1 teaspoon of olive oil, then season lightly with salt and pepper.

    3Roast for 25 to 35 minutes, or until an instant-read thermometer inserted into the thickest part of the chicken reads 165°F. Transfer the chicken to a plate and let it cool until it’s easy to handle. Remove the skin and bones, then chop the meat into small pieces. Save any juices from the pan to add to the soup for extra flavor.

  • Make the Soup
  • 1About 10 minutes before the chicken is finished roasting, start the soup. Place a large, heavy-bottomed pot (we love using our Dutch oven) over medium heat. Add 1 ½ tablespoons of oil, along with the onions, carrots, fennel, and a pinch of salt. Cook, stirring occasionally, until the vegetables smell sweet and almost tender, about 10 minutes.

    2Stir in the garlic, herbs, turmeric, and bay leaf, and cook for 1 minute until fragrant.

    3Pour in the broth and bring to a simmer. Once it reaches a simmer, reduce the heat to medium-low to maintain a gentle bubble. Season with ¼ teaspoon of salt and a generous amount of pepper. Let simmer for 20 minutes.

    4Add the zucchini, kale, pasta, chopped chicken, and any juices left in the pan from roasting the chicken. Simmer for 10 minutes, or until the pasta is al dente. Taste and adjust the seasoning (we usually add 1 to 1 ½ teaspoons of salt total, depending on the broth).

    5Just before serving, drop in the lemon slices. Ladle into bowls and top with grated Parmesan cheese, if you like.

  • Pasta: If you plan to serve the whole batch of soup straight away, add the pasta according to our directions above. If you plan to enjoy the soup over a few days, it’s best to cook the pasta separately and add it when serving. The pasta will soak up the liquid as the soup sits and become mushy.
  • Storing: The soup will keep in the refrigerator for a few days and in the freezer for up to a month. It’s best to keep the pasta and soup separate when storing since the pasta will absorb liquid and become too soft. If it seems dry when you reheat the soup, add a splash of stock or water.

I’ve been making this creamy vegetable soup for over 15 years. It’s a staple soup for my family, the one we turn to when we need a little comfort or an easy meal.

Key Ingredients

  • Vegetables: I keep this vegetable soup really simple with onions, garlic, carrots, and celery. If you have other veggies in the fridge that need to be used up, feel free to add them. I’ve added zucchini, summer squash, and even winter squash cubes to this and loved it.
  • Potatoes: Instead of using a roux made with butter and flour, we add a pound of potatoes to make this soup thick and creamy. I prefer thin-skinned potatoes like Yukon Gold and don’t peel them. You can substitute sweet potatoes.
  • Broth: This recipe calls for vegetable broth or chicken broth. You can make your own or buy it. When looking for store-bought veggie broth, I go for the brands that include mushrooms (these tend to have more flavor).
  • Thyme and Bay Leaves: I love these for their classic flavor. You can use fresh or dried.
  • Something Creamy: When the soup is blended, I stir in something creamy to make things extra delicious. I love cream or half-and-half, but you can use dairy-free coconut milk or this homemade cashew cream.

How to Make the Best Creamy Veggie Soup

Tip 1: Cut all the veggies to the same size. So that everything cooks quickly and evenly, chop your vegetables into similar sizes. Remember that this soup is eventually blended, so there’s no need for perfect cuts, though. I cook onions, carrots, and celery in a big pot until softened. Then, I add potatoes, garlic, broth, and herbs.

Tip 2: Remove your bay leaf before blending. The vegetables will be soft after simmering for 15 minutes. Then you will blend. Before you do, remove the bay leaf and thyme stalks (the leaves will have fallen off into the soup). Then, blend the vegetables into a creamy soup. I’ve lost count of how many times I’ve forgotten a bay leaf before blending soup. The thyme stalks and bay leaf don’t soften well enough to blend in, so it really is best to remove them!

Tip 3: Finish with something creamy. The potatoes really make this soup thick and creamy, but I still love adding a splash of cream or half-and-half just before serving. You can skip it or use a dairy-free option like coconut milk. It’s amazing all by itself, but I love topping it with some homemade croutons.

You Will Need

1 large onion, chopped into ½-inch pieces

1 pound carrots, peeled and chopped into 1/2-inch pieces, 4 to 5 medium carrots

4 celery sticks, chopped into ½-inch pieces

1 tablespoon olive oil

Salt, as needed

¼ teaspoon crushed red pepper flakes

1 pound thin-skinned potatoes, chopped into ½-inch pieces, 3 medium potatoes

3 garlic cloves, peeled and halved

3 cups vegetable broth or chicken broth (710ml)

2 bay leaves

3 sprigs fresh thyme or ½ teaspoon dried thyme

¼ cup half-and-half, cream, or coconut milk (60ml)

Directions

    1Cook the veggies: Heat the oil in a large pot over medium-high heat. Toss the onion, carrots, and celery around in the oil. Sprinkle with ½ teaspoon of salt and add the red pepper flakes. Cook, stirring occasionally, until the vegetables sweat, soften, and smell sweet, 5 to 10 minutes.

    2Add the potatoes: Stir in the potatoes, garlic halves, bay leaves, and thyme. Cook for 5 minutes. Add more oil if the pot seems dry.

    3Simmer the soup: Pour in the broth and bring to a boil. Reduce to a simmer and cook until you can easily pierce the potatoes with a fork, about 15 minutes.

    4Blend the soup: Remove the soup from the heat. Take out the bay leaves and thyme sprigs and discard them. Use an immersion blender, stand blender, or food mill to puree the soup until smooth.

    5To finish: Stir in the cream. Taste for seasoning and adjust with more salt and pepper if necessary.

  • Storing: Store leftovers in an airtight container in the fridge for up to 4 days. You can also freeze it! Portion into freezer-safe containers or bags and freeze for up to 3 months. Thaw overnight in the fridge.
  • Reheating: Add to a saucepan over medium-low heat and cook, stirring occasionally, until hot. You can also microwave it. Use a spoon or whisk to bring the soup back together if it is separated.
  • Vegan vegetable soup: Use either homemade veggie broth or store-bought broth, and look for one that is heavy on mushrooms for the most flavor. Add full-fat coconut milk or cashew cream at the end.
  • Substitute the potatoes: Try 1 can of drained and rinsed white beans. Once blended, they make the soup creamy and add a little extra protein.

  • To add pasta, stir in pasta 10 minutes before the veggies soup has finished cooking. I love smaller pasta shapes like orzo in soup or adding tortellini (like in this veggie tortellini soup).
  • To make it creamy,  add a splash of cream, milk, or unsweetened dairy-free milk at the end. You can also stir in a little bit of unsweetened yogurt or sour cream. Or blend all the ingredients like we do with this creamy veggie soup.
  • Or, add more veggies! You can add as many vegetables as you like to this veggie soup recipe. Feel free to toss in a handful of other vegetables, such as cauliflower, broccoli, summer squash, or corn.

3 tablespoons olive oil

2 cups chopped onion, 1 large

1 ½ cups chopped carrot, 3 to 4 carrots

1 ½ cups chopped celery, 2 to 3 stalks

2 tablespoons tomato paste

4 teaspoons minced garlic, 4 cloves

¾ teaspoon ground fennel seed

½ teaspoon ground black pepper

½ teaspoon fine sea salt, plus more to taste

⅛ to ¼ teaspoon crushed red pepper flakes, optional for heat

1 (15oz) can diced tomatoes with their liquid

Directions

    1Sauté the vegetables: Heat the olive oil in a large Dutch oven or pot over medium heat. Add the onions, carrots, celery, and tomato paste. Cook, stirring often, until the vegetables have softened and the onions are translucent, 8 to 10 minutes.

    2Add aromatics: Stir in the garlic, fennel, black pepper, ½ teaspoon of salt, and the red pepper flakes. Cook, while stirring, for one minute.

    3Build the soup base: Pour in the canned tomatoes and their juices and the stock/broth. Add the potatoes, cabbage, and bay leaves. Raise the heat to medium-high and bring the soup to a boil. Partially cover the pot with a lid, then reduce the heat to maintain a low simmer.

    4Simmer: Simmer for 20 minutes or until the potatoes and other vegetables are tender. Add the frozen peas and cook for five more minutes.

    5To finish: Remove the pot from the heat and remove the bay leaves. Stir in the cider vinegar (or use lemon juice). Taste and season with more salt, pepper, or vinegar. Serve.

This vegetable risotto recipe combines two of our favorite things: fresh veggies and super creamy risotto rice. It’s fun to make and with our tips to guide you, it’s easy!

Homemade Veggie Risotto

We’re excited to share this recipe developed with our chef friend, Richard Hattaway. Thanks to Richard’s restaurant trick, making risotto at home is now easier than ever. Instead of the usual continuous cooking, this recipe breaks the process into two stages. You can do most of the cooking up to 4 days ahead, then finish it in just 10 minutes right before serving.

Of course, you can still make the recipe all at once if you prefer, but this two-stage method makes risotto much more convenient for busy schedules. For another risotto recipe, see our mushroom risotto.

Key Ingredients

  • Rice: The best rice for risotto are Arborio, Carnaroli, and Vialone Nano since they are all short-grain rice varieties with a high starch content. We use Carnaroli in our kitchen since it makes creamy risotto and is more forgiving when it comes to overcooking.
  • Broth: A good vegetable broth and even chicken broth work perfectly well in this recipe, but we love our easy tomato broth for a summery tomato risotto base (that is what we have used in our photos).
  • White Wine: Whenever you cook with wine, the most important thing to remember is to use something you enjoy. We use a light, dry white wine like Pino Gris, Albariño, Grüner Veltliner, or Sauvignon Blanc for this veggie risotto. Wine adds flavor and some acidity. If you prefer to leave it out, replace it with more broth and sprinkle a little fresh lemon juice over the risotto before serving.
  • Veggies: We love risotto with veggies. You have some leeway when it comes to the vegetables. We use yellow squash, zucchini, tomatoes, eggplant, and fresh herbs. These are the same veggies we use to make our reader favorite veggie lasagna.
  • Butter: There’s no cream in this risotto (thanks to the rice, it is creamy enough), but a generous pat of butter adds to the creamy, luxurious texture. For vegan risotto, use plant-based butter.
  • Parmigiano-Reggiano: I’m generous with the cheese and recommend you do the same. For a vegetarian risotto, swap the Parmigiano-Reggiano for a vegetarian-friendly cheese like mozzarella, ricotta, or vegetarian parmesan. For vegan risotto, swap for a bit of nutritional yeast.

  4. Add broth gradually, stirring occasionally to prevent the rice from sticking.
  5. Finish with quick-cooking vegetables (like zucchini and yellow squash).

Tip 2: Use a heavy-bottomed pan and a wooden spoon. Choose a wide, heavy-bottomed pan so you have room to stir. A wooden spoon is ideal for risotto (a tip from Richard, who says it helps create a creamier texture).

Tip 3: Continue adding broth as the rice cooks. Let the rice absorb liquid slowly. When the broth is mostly absorbed, add more. Stir occasionally, not constantly. Just enough to keep the rice from sticking. When the rice is almost tender but still firm in the center, it’s about 75% cooked.

Tip 4: Use the two-part method (excellent for entertaining). When the rice is tender but still firm in the center (about 75% done), you can finish and serve, or pause and store the risotto for later.

  1. Part 1, store for later: Spread the partially cooked risotto on a baking sheet and cool quickly in the freezer. Transfer to containers and refrigerate for up to 4 days.
  2. Part 2, finish when ready to serve: Return the rice to your wide pan with chopped zucchini/yellow squash and a splash of broth. Stir often, adding more broth as needed, until the risotto is creamy and the rice is just tender. Season with salt and pepper, stir in chopped tomatoes, then finish with butter and Parmigiano-Reggiano.

Tip 5: Add the optional eggplant puree. Roasted eggplant adds even more savory flavor and extra creaminess. We’ve included instructions below if you’d like to use it.

Serving Suggestions

This dish works really well on its own, but you can always add more to round out the meal. Consider a simple green salad with lemon vinaigrette or a homemade Caesar on the side.

You can add some protein with poached shrimp, simple baked salmon, or these lemon chicken thighs. And, I love a nice slice of roasted garlic bread or focaccia with this olive oil bread dip.

Perfect Vegetable Risotto

This vegetable risotto combines two of our favorite things: fresh veggies and super creamy risotto rice. It’s also fun to make. We use a wide, heavy-bottomed pan and wooden spoon for risotto. A stainless steel rondeau or a wide Dutch oven is excellent. For the broth, we love our tomato broth (it takes 30 minutes), but you can use your favorite homemade or store-bought broth in its place. You will need about 6 cups.

If you are entertaining, we highly recommend making the risotto in stages. First, cook it until 75% done, cool the rice mixture, and then about 10 minutes before serving, reheat and finish the risotto. This way, you are not standing over a hot stove for 30+ minutes when your guests are there. This method is written into the recipe below.

Makes 6 servings

You Will Need

6 cups vegetable broth, we highly recommend this tomato broth (1420ml)

2 cups arborio rice or carnaroli rice (380g)

1 cup dry white wine, see notes (236ml)

¼ cup olive oil (60ml)

1 cup finely chopped onion, half large onion

¾ cup finely chopped red bell pepper, half large pepper

3 cloves garlic, minced

1 teaspoon fresh thyme leaves, chopped

1 medium yellow squash, chopped small

1 medium zucchini, chopped small

1 ¼ cups cherry tomatoes or use chopped tomatoes, 6 ounces

3 tablespoons salted butter

Handful chopped fresh herbs like basil, chives, and green onion

Parmigiano-Reggiano cheese for serving

Directions

  • Make Rice Mixture
  • 1Cook aromatics: In a wide, heavy-bottom pan over medium heat, cook the garlic, onion, and bell pepper in olive oil until the onions turn translucent, about 3 minutes.

    2Toast the rice: Add the rice and thyme and cook, stirring for 3 to 5 minutes. When the rice sticks a little, pour 1 cup of white wine into the pot. Stir the rice and wine around the pan with a wooden spoon until mostly dry.

    3Add the broth: This step will take about 15 minutes. Begin by measuring out 3 ½ cups of broth, setting aside the remaining 2 ½ cups for later. Pour one third of the measured broth into the pan and keep the risotto at a low simmer while stirring often to prevent the rice from sticking. Once the pot becomes mostly dry, add another one third of the broth and repeat the process until all of the remaining stock has been added.

    4The rice will be about 75% done and will be somewhat tender while still having a raw bite in the center. This is the end of stage one. Either cool the partially cooked risotto to finish later or move on to finishing the risotto.

  • Cool Rice Mixture (optional for entertaining or making ahead)
  • 1You can skip this step if making the risotto from start to finish. When the rice mixture is 75% done, cool the risotto rice by spreading thin on a baking sheet and placing it in the refrigerator. When it is cool, transfer the risotto rice to a container or resealable bags, and store it in the fridge for up to 4 days. If you have a smaller family, like me, you can divide the rice mixture into two batches.

  • Finish Risotto
  • 1Add the squash and zucchini: About 10 minutes before serving, heat a wide, heavy-bottomed pan over medium heat. Add the cooled rice mixture, chopped yellow squash, and zucchini. If you skipped cooling the rice, simply add the squash and zucchini to your pan with the hot rice mixture.

    2Add the broth: Grab the remaining 2 ½ cups of broth. Pour in a third of the broth. Then, with the wooden spoon, stir the rice mixture constantly, ensuring it doesn’t stick to the pan. Once the pot is mostly dry, add another one third of the broth and repeat the process until all of the remaining stock has been added.

    3Season and add the tomatoes: Season the vegetable risotto with 1 ½ teaspoons of fine sea salt, and stir in the tomatoes.

    4To finish: Grate enough parmesan cheese over the top to cover the rice, add the butter, and finish with 5 twists of black pepper. Stir until the butter melts and the tomatoes are hot. The risotto should be creamy, the squash tender, and the tomatoes heated through. Serve immediately with fresh green herbs, green onion, and extra parmesan cheese on top.

Adam and Joanne’s Tips

  • Eggplant puree: For even more flavor, stir in 1/2 cup of eggplant puree to the risotto at the same time as the tomatoes. To make eggplant puree, char the outside of a medium eggplant over a gas flame or under the broiler for about 10 minutes. Then, roast the eggplant in a 425°F (220°C) oven for 12 minutes or until the eggplant is completely soft. Remove the eggplant from the oven and let it cool. Scrape the softened eggplant flesh into a blender and puree until smooth.
  • Wine to use: Choose a lighter dry white wine like Pino Gris, Albariño, Grüner Veltliner, or Sauvignon Blanc
  • Wine substitution: If you prefer to leave the wine out, replace it with more broth and sprinkle a little fresh lemon juice over the risotto before serving.
  • Alternate methods: For the best, creamiest result, we do not recommend using a slow cooker or pressure cooker (Instant Pot) for making risotto.

How to Make the Best Vegetable Broth

Tip 1: Roast your vegetables. For the most savory and satisfying broth, roast the onion, carrots, celery, tomatoes, and garlic until nicely browned. This simple step intensifies the stock’s flavor and adds color.

Tip 2: Don’t leave out the tomatoes. Tomatoes add sweetness, color, and umami to this broth. Tomatoes are naturally high in glutamate, which means they contribute to that “fifth taste” or umami. Simply put, umami makes things taste good, adding that super delicious quality. Using tomatoes makes it rich and crave-worthy.

Tip 3: Use dried mushrooms. Even though we didn’t add any bones or meat to this recipe, we still wanted some “meatiness” in the stock. Mushrooms are the solution. Just one ounce of dried mushrooms transforms this veggie broth from merely okay to something you wonder if it’s even vegetarian.

Tip 3: Use it in your favorite recipes. This is perfect anytime a recipe asks for broth (even if it’s asking for chicken broth or beef broth). I often use it to make the soup recipes on Inspired Taste, like this potato soup, French onion soup, butternut squash soup, lemon turmeric lentil soup, and this veggie tortellini soup. It’s also great for cooking rice or quinoa. Use it in my quinoa recipe or to make this cilantro lime rice.

This homemade vegetable broth is hearty enough to enjoy alone as soup and perfectly replaces boxed stock in your favorite recipes. Roasting is the secret to rich and hearty veggie stock. When seasoned well, we find this veggie broth just as satisfying as bone broth.

Think of this as a guide, and feel free to add any vegetable scraps in your fridge or freezer. Leeks, turnips, or mushroom scraps are all excellent. For even more richness, we add dried mushrooms, which pack a punch and add a “meatiness” to the stock.

Makes 10 cups

You Will Need

1 pound onion, 2 medium (450g)

1 pound carrots, 5 medium (450g)

1/2 pound celery, 4 to 5 (225g)

1 pound tomatoes, 3 medium (450g)

4 garlic cloves, smashed and peeled

2 tablespoons olive oil

1/2 ounce dried mushrooms such as shiitake or porcini (14g)

Half a bunch of fresh parsley

3 sprigs fresh thyme

2 bay leaves

1 to 2 cups vegetable scraps from fridge or freezer, optional

1 teaspoon sea salt, optional

12 cups water, preferably filtered (2.8L)

Directions

    • Roast Vegetables

1Preheat the oven to 425°F (218°C). Set aside a large, rimmed baking sheet or a 9-inch by 13-inch baking dish for roasting the vegetables.

2Peel the onion and roughly chop it into 1-inch chunks. Scrub the carrots and celery and cut them roughly into 1-inch chunks. Rinse the tomatoes, and if they are large, half or quarter them.

3Add onion, carrots, celery, tomato, and garlic to the baking sheet. Toss with olive oil and roast for 15 minutes. Stir the vegetables and roast for another 15 minutes. Stir once more and roast until the vegetables are nicely browned and the tomatoes are caving in, another 10 minutes or so.

    • Make Vegetable Broth

1While the vegetables roast in the oven, cover the dried mushrooms with 1/2 cup of cold water and set aside for 5 minutes.

2Spoon the roasted vegetables into a tall stockpot. Add 1 cup of water to the baking sheet or pan, then stir it around, scraping up as much of the browned bits stuck to the bottom as possible. Pour over the vegetables in the stockpot.

3Add the parsley, thyme, bay leaves, vegetable scraps, and salt (if using).

4Add the partially rehydrated mushrooms, and then pour the water they sit in through a fine mesh strainer to catch any grit. Add the strained mushroom water to the pot with the vegetables.

5Cover with 11 cups of water. Bring to a boil, then reduce to a simmer. Cook, partially covered, for 45 minutes.

6Strain broth and use immediately, refrigerate for up to 3 days, or freeze for up to 3 months. When using, taste the broth and adjust the seasoning with additional salt or, if you are okay with using it, a few dashes of fish sauce.

  • Dried mushrooms alternative: If you can’t find dried mushrooms, you can add mushroom scraps or chopped mushrooms to the onions and carrots when they roast. Dried mushrooms will taste stronger, but this will still make a delicious broth.
