    This Sausage and Lentil Soup has roasted red pepper, and I love how spicy Italian Sausage adds flavor to this easy soup! And this recipe uses a generous amount of sausage and roasted peppers and not many lentils, so it’s surprisingly low in carbs!

    This delicious Sausage and Lentil Soup is something I love to pull out of the freezer for an easy dinner, and it’s starting to feel like soup season in the northern hemisphere! And even though lentils have some carbs, this is definitely a carb-conscious soup with lots of sausage and peppers and not that many lentils. When I updated the recipe a few years ago I ended up using a whole package (19.5 oz.) of Italian sausage so there would be more sausage than lentils.

    And lentils are high in fiber too, so with only one cup of dried lentils in six servings this soup would be a good choice for low-carb eaters. I love sausage, lentils, peppers, and all the other flavors in this soup, hope you enjoy trying it!

    I used roasted red pepper from a jar for this soup recipe, which made it quick and easy to get on the table! You can also use diced fresh red bell peppers; just add them a bit earlier in the cooking time.

    How to make Sausage and Lentil Soup:

    1. Brown the sausage well and put it in the soup pot. (I used to use turkey Italian sausage for this soup, but now I can’t find that very often and pork sausage will also be delicious. Use either sweet or hot Italian sausage, whichever you prefer.)
    2. Brown the onions and add to the soup pot with the chicken stock or broth, lentils, ground fennel, dried thyme, and dried sage.
    3. Drain the roasted red peppers into a colander.
    4. Let the soup simmer until the lentils are tender, about 45 minutes.
    5. When the lentils are tender, chop the red peppers and add to the soup.
    6. Then let soup simmer about 45 minutes more, or until lentils are as soft as you prefer and flavors are well blended.
    7. Season the Sausage and Lentil Soup with salt and fresh-ground black pepper and serve hot.

    Ingredients

    • 1 package (19.5 oz.) Italian Sausage (see notes)
    • 2 tsp. olive oil (or more, depending on your pan)
    • 1 onion, diced into small pieces
    • 1 cup brown lentils
    • 6 cups chicken broth (see notes)
    • 2 tsp. ground fennel (do not leave out)
    • 1 tsp. dried thyme
    • 1 tsp. rubbed sage (dried)
    • 1 12 oz. jar roasted red peppers

    Instructions

    1. Heat olive oil in heavy frying pan, add Italian sausage and brown well, breaking sausage into pieces as it cooks. (I like to use an old-fashioned Potato Masher (affiliate link) to break the meat apart.)
    2. Add sausage to soup pot.
    3. In same pan, adding more oil if needed, brown onions until softened and barely starting to brown.
    4. Add onions to soup pot.
    5. Rinse out pan with 1 cup chicken broth, then add to soup pot along with rest of broth, lentils, ground fennel, thyme, and sage.
    6. Cook at lowest possible simmer for about 45 minutes, until lentils are softened, but still holding their shape.
    7. Drain the roasted red peppers while the soup simmers, then chop into pieces about 1/2 inch square.
    8. Add red pepper to soup and cook about 45 minutes more (adding a little more broth or water if needed), until some lentils are starting to fall apart and all flavors are well blended.
    9. Season Sausage and Lentil Soup with salt and fresh ground black pepper and serve hot.

    Notes

    If you only find Italian Sausage in a one pound package, that will be fine. Use turkey or pork Italian sausage. whichever you prefer. You can use sweet or hot Italian sausage.

    Homemade chicken stock would be great for this recipe, but if you don’t have that just use 3 cans chicken broth plus a little water.

    How to Make Curried Apple, Potato and Carrot Soup

    We love hearty soups that are thick and satisfying and this easy soup recipe absolutely delivers! Just like when making our creamy vegetable soup, we blend in potatoes to make the soup thick and creamy. In addition to the potatoes, this curried soup combines apples, celery, coconut milk, and just enough curry powder to add spice and amazing flavor.

    How to Make Curried Apple, Potato and Carrot Soup

    The soup is really simple to make. Start by adding lots of carrots, celery, apples and potatoes to a big pot with some olive oil. Cook them until slightly softened, and then add curry powder, which is a spice blend with coriander, mustard seeds, cumin and more.

    When there’s a little color on the vegetables and they are starting to soften, we add creamy unsweetened coconut milk as well as chicken or vegetable stock. [Here’s our homemade chicken stock as well as our recipe for homemade veggie broth]

    After simmering for a 10 to 15 minutes, the vegetables and apple will be soften enough to blend. We use an immersion blender to puree the soup until creamy, but adding the soup to a blender will work, too.

    Just before serving, as an optional step, you can stir in some half-and half or cream, making it luxurious. We also love to serve it with a dollop of yogurt on top. For a dairy-free soup, simply eliminate this from the recipe. It is still excellent without it. Or add a drizzle of our favorite tahini sauce on top, instead.

    Curried Coconut Apple Carrot Soup

    Just before serving, we stir in some half-and half or cream, making it luxurious and serve it with a dollop of yogurt on top. If you wanted the carrot soup to be dairy-free simply eliminate this from the recipe. It is still excellent without it. Or add a drizzle of our favorite tahini sauce on top instead.

    Makes approximately 4 large or 6 small servings

    You Will Need

    2 tablespoons extra-virgin olive oil

    1 pound carrots, peeled and chopped (5 to 6 medium)

    2 Granny Smith apples, peeled and chopped

    3 stalks celery, chopped

    1 pound yellow or red potatoes, chopped (3 to 4 medium)

    1 1/2 teaspoons curry powder

    1/4 teaspoon red pepper flakes

    1 (14 ounce) can light coconut milk

    2 cups chicken stock, see our homemade chicken stock recipe

    1/3 cup half and half, optional

    2 tablespoons fresh lime juice

    Salt and fresh ground black pepper

    1/4 cup plain yogurt

    Fresh chopped herbs such as dill or cilantro

    Freshly baked Pillsbury biscuits or rolls

    Directions

      1Heat 3-quart saucepan over medium heat, add olive oil then add carrots, apples, celery and the potatoes. Cook, stirring occasionally, 5 to 8 minutes or until vegetables and apples begin to sweat.

      2Stir in curry powder, red pepper flakes and 1 teaspoon of salt. Cook 2 minutes, and then add coconut milk and chicken stock. Simmer soup until the vegetables are soft, about 20 minutes.

      3Use an immersion blender to blend the soup until creamy. Remove from heat then add half-and-half and lime juice. Taste for seasoning and adjust with salt and/or pepper.

      4Divide soup between bowls then top with 1 tablespoon of yogurt and a sprinkle of fresh chopped dill. Serve with warm biscuits or bread rolls.

    Healthy Broccoli Soup with Nut & Olive Pesto

    Healthy Broccoli Soup

    I love this broccoli soup for its health benefits AND taste. Made with nutritious vegetables, and lots of healthy fats from olive oil, nuts, and olives, it is very high in antioxidants, vitamins and minerals. 

    I originally made it as Whole30 and paleo broccoli soup, so I didn’t use any dairy or flour to thicken it. I also didn’t want the coconut flavour, so I avoided using coconut milk or cream. So what makes it thick and creamy?

    Well, the hack is using some white potatoes. The starch in the potato is great for both thickening and making this soup more satiating. It adds that velvety, thick texture.     This soup is quite satiating and can be served as a main dish. And, with only about 25-28 grams of net carbohydrates per serving, it will suit those following a low-carb or carb-restricted diet, plus it’s gluten-free and vegan-friendly!

    Olive Pesto

    To go with the soup, I made a nut and olive pesto. It’s similar to an olive tapenade – nutty, salty, garlicky with a note of bitterness. While the soup is tasty as is, I use this pesto as a bit of condiment or topping. It adds a more intense and interesting flavour and some crunchy texture.

    These toppings would also work well instead of the pesto: crispy bacon bits, fried shallots, shredded chicken or diced smoked chicken, sun-dried tomato pesto or basil pesto.

    Nutrition Notes

    For a vegetarian dish, it’s very nutrient-dense. I call it an anti-ageing soup with high amounts of antioxidants (vitamins C and E, zinc and selenium, indoles, and allium sulphur compounds). 

    It’s also rich in vitamin K, which you need for bone health and blood clotting, and many essential minerals. Protein is decent with 8 grams per serving thanks to the nuts pesto, and you’ll be getting plenty of fibre, too. 

    This healthy broccoli soup is paleo, gluten-free, Whole30, vegetarian and vegan-friendly. 

    Nutrition Macros Per serving (with olive pesto): 365 calories, 35 g total carbs, 7.5 g fibre (28.5 g net carbs), 8 g protein, 24.7 g fat.

    You will love this healthy yet delicious broccoli soup served with a topping of nut and olive pesto. This soup is nutrient-dense and full of antioxidants, plus it’s Paleo, Whole30, gluten-free and vegan-friendly. It’s easy to make and is great for batch cooking and freezing.

    For the nut & olive pesto

    • Add olive oil, onion, salt and lemon zest to a large saucepan and heat over medium heat. Sauté for 3 minutes until softened and lightly golden.

    • Add celery and diced potatoes, stir and cook together for a minute.

    • Add the stock, water, and cumin powder and stir through. Cover with a lid and bring to a boil. Cook over medium heat for 10 minutes, then add the broccoli, garlic, pepper and bay leaves. Cover with a lid and bring the heat to high. Cook for 5 minutes until broccoli has softened but hasn’t lost its green colour.

    • Remove from heat and transfer the contents of the soup – in batches – to a food processor or a blender (remove the bay leaves). Process into a smooth puree, then return to the saucepan and add stir in the lemon juice.

    • While the soup is cooking, prepare the pesto. Place the nuts into a food processor with an S-blade attachment and grind into crumbs. Add the rest of the ingredients and process together until ground up and blended into a course, pesto-like consistency. Remove to a bowl.

    • Serve the soup in bowls with a tablespoon of pesto stirred in.

    • Instead of using the vegetable stock and water combo, you can use 1.5 litres of water and two organic, natural vegetable stock cubes. If the stock you’re using is quite salty, reduce the amount of salt added at the beginning and taste for seasoning at the end instead.
    • Beef or chicken bone broth is also fantastic to use and will make this soup even more nourishing. 
    • You can use cauliflower instead of broccoli.

    Chicken Pesto Soup (Instant Pot or Stovetop)

    Chicken Pesto Soup is a recipe I came up with when I was experimenting with a chicken soup with cauliflower rice! And I do know how people love chicken with pesto. So knowing the popularity of that combination probably influenced the impulse to add pesto to this tasty soup.

    And the chicken soup with pesto and lemon was really a wow for me! I made this soup in the Instant Pot, which was quick and easy. But you can easily make it on the stove, and I’ll give instructions for that. No matter which version you prefer, I hope you make this interesting soup right away!

    What pesto did I use for Chicken Pesto Soup?

    I always use my Basil Pesto with Lemon if I have some in the fridge or freezer. But when I don’t have homemade pesto I love the Kirkland Basil Pesto (affiliate link) that’s sold at Costco or on Amazon.com.

    How to make soup with pesto and keep the pot clean:

    This is a simple recipe, but I want to give you one caution: Be sure to turn off the heat when you stir the pesto into the hot soup. If you add pesto and let the soup sit with the Instant Pot (or stove) still turned on, you’ll have melted cheese on the pot that will be a pain to scrub off. (I learned that the hard way, although it didn’t stop me from really enjoying the soup!) Another option to keep your Instant Pot or soup pot as clean as possible is stirring some pesto into each bowl of soup when you serve it

    How low in carbs is this Chicken Pesto Soup?

    This fun variation for chicken soup only has 5 net carbs and 22 grams of protein per serving!

    How to make Chicken Pesto Soup:

    1. Take cauliflower rice out of the freezer and let it start to thaw.
    2. Trim chicken breasts and cut lengthwise.
    3. Finely chop onion, celery, and carrots.
    4. Turn Instant Pot to SAUTE, HIGH HEAT, and melt butter; then add onion, carrots, and celery and cook 2-3 minutes.
    5. Add Italian Herb Seasoning, sage, ground thyme, salt, and fresh-ground black pepper and cook a minute more.
    6. Add chicken broth or stock, chicken breast strips, and soup base. 
    7. Lock the lid and set Instant Pot to MANUAL, HIGH, 6 minutes.
    8. Let Instant Pot natural release 10 minutes; then release the rest of the pressure.
    9. Remove cooked chicken pieces to cutting board.
    10. Turn Instant Pot to SAUTE, LOW and add frozen cauliflower rice.
    11. While cauliflower rice cooks, shred chicken apart. 
    12. After cauliflower rice has cooked about 5 minutes, add shredded chicken to the soup and cook about 3 minutes more.
    13. Turn off the Instant Pot and stir in basil pesto and lemon juice.
    14. Serve the Chicken Pesto Soup right away and enjoy! We served this with more Parmesan cheese to add at the table.

    • 1 tsp. Italian Herb Seasoning
    • 1/2 tsp. ground sage
    • 1/2 tsp. ground thyme (see notes)

    • 8 cups chicken broth (see notes)
    • 3 T chicken soup base
    • 4 large boneless, skinless chicken breasts
    • 10.5 oz. package frozen cauliflower rice (see notes)
    • 1/4 cup basil pesto (see notes)
    • 2 T fresh-squeezed lemon juice (see notes)

    Instructions

    Instant Pot Instructions:

    1. Take cauliflower rice out of the freezer and let it start to thaw on the counter. (I used a 10.5 oz. package which was 2.5 cups of cauliflower rice.)
    2. Trim chicken breasts and cut lengthwise into 2 or 3 strips each.
    3. Finely chop onion, celery, and carrots. (You can use less carrot if you’d like to reduce the carbs even more.)
    4. Turn Instant Pot to SAUTE, HIGH HEAT, and melt the butter. Then add the chopped onion, carrots, and celery and cook a couple of minutes.
    5. Add Italian Herb Seasoning, sage, ground thyme, salt, and fresh-ground black pepper and cook a minute more.
    6. Add chicken broth or stock, chicken breast strips, and soup base.
    7. Lock the lid and set Instant Pot to MANUAL, HIGH, 6 minutes.
    8. When time is up, let the Instant Pot natural release for 10 minutes; then carefully open the valve and release the rest of the pressure.
    9. Remove cooked chicken pieces to a cutting board.
    10. Turn Instant Pot to SAUTE, LOW and add the frozen cauliflower rice.
    11. While cauliflower rice cooks, shred chicken apart.
    12. After cauliflower rice has cooked at least 5 minutes, add shredded chicken to the soup and cook about 3 minutes more.
    13. Turn off the Instant Pot and stir in basil pesto and lemon juice.
    14. Serve right away and enjoy! We served this with more Parmesan cheese to add at the table.

    Stovetop Instructions:

    1. Thaw cauliflower rice, prepare vegetables, and prepare chicken same as above.
    2. You will need at least another 1/2 cup chicken broth or stock for stovetop cooking.
    3. Melt butter in a large soup pot and saute onion, carrots, and celery for a few minutes.
    4. Then add Italian Herb Seasoning, sage, thyme, salt, and fresh-ground black pepper and cook a few minutes more.
    5. Add chicken broth or stock, chicken breast strips, and soup base to the soup pot and turn heat to low.
    6. Let soup simmer about 40 minutes on low, or until chicken is firm.
    7. Remove chicken to cutting board and add cauliflower rice. Cook about 15 minutes more on low.
    8. Shred chicken apart and add to soup pot when the cauliflower rice is done. Cook about 5 minutes more to be sure chicken is heated through.
    9. Turn off heat, stir in basil pesto and lemon juice, and serve.

    Notes

    You can use dried thyme leaves, but they float on the top of the soup when it’s done so I prefer to use ground thyme for soup. You can grind the thyme in a Mortar and Pestle (affiliate link) if you have one.

    If you have homemade chicken stock that will be delicious in this soup. If you use canned chicken broth, 8 cups is 4.5 cans. If you’re cooking on the stove use the whole 5 cans. I use Better than Bouillon Roasted Chicken Base (affiliate link), but any chicken soup base you like the flavor of will work.

    The 10.5 oz. package of frozen cauliflower rice was 2.5 cups; you could use a bit more if you prefer a thicker soup.

    Use more or less pesto and lemon juice to taste. If I had some of my Basil Pesto with Lemon in the freezer I’d definitely use that for the soup, but purchased basil pesto will also be delicious. I used my fresh-frozen lemon juice lemon juice.

    I love the addition of sausage for this, it adds so much flavor. For a meatless minestrone, skip the sausage and replace the chicken stock with a hearty vegetable stock.     Think of this recipe as a guide. The soup is excellent as written, but this is the perfect opportunity to use up vegetables in the fridge. This is great eaten straight away and it will keep overnight. The pasta may become softer overtime, but the flavors of the soup will improve.

    Makes approximately 6 servings

    You Will Need

    2 tablespoons extra-virgin olive oil

    8 ounces bulk spicy or Italian pork sausage, see note

    2 medium bulbs fennel, trimmed and finely chopped

    1 medium onion, finely chopped

    3 medium carrots, peeled and finely chopped

    3 stalks celery, finely chopped

    3 garlic cloves, minced

    2 medium zucchini or yellow summer squash, finely chopped

    1 (15-ounce) can diced tomatoes, with juice

    1 (15-ounce) can cannellini beans (white kidney beans)

    8 cups low-sodium chicken stock, see how we make chicken stock

    1 bay leaf

    3 sprigs fresh thyme

    3/4 cup small dried pasta such as penne, elbow or orecchiette

    1 pound baby spinach (about 4 cups)

    Salt and fresh ground black pepper

    1/4 cup fresh parsley leaves and tender stems, chopped

    Fresh grated Parmesan cheese for serving

    Directions

      1Heat the olive oil over medium-low heat in a large, heavy soup pot or Dutch oven and add the fennel, onion, carrots and celery. Cook, stirring, until beginning to soften, about 3 minutes. Stir in 1/2 teaspoon of salt and garlic and cook for 1 minute.

      2Add zucchini, tomatoes with juice, beans, bay leaf, thyme and the chicken stock, and bring to a simmer. Stir in 1 teaspoon of salt, taste then adjust with more as needed. Add 6 to 7 generous grinds of black pepper. Reduce heat to low and simmer about 20 minutes.

      3Add pasta and cook until it is tender but not mushy, 8 to 10 minutes. Stir in spinach and parsley and cook until wilted, about 2 minutes. Taste the soup and adjust with more salt and/or pepper. Serve with parmesan cheese on top.

    • Depending on the store, you can find bulk sausage. If you cannot and instead buy sausage formed into links, remove the casings by cutting a slit down the sausage and pulling the casing away from the meat. The meat from two large sausages should do it.

    Easy Potato Leek Soup Recipe

    I make this potato leek soup recipe all the time! This easy soup is super creamy and comforting (and I make it without cream!).

    I learned how to make potato leek soup from my Mom, who makes it weekly. The ingredient list for this easy soup is pretty short (woohoo!) and super simple to prepare.

    Plus, it keeps well in the fridge or freezer for busy days. We love this soup and hope you’ll give it a try!

    Key Ingredients

    • Butter: I love the creaminess butter adds, especially since this soup has no cream, but olive oil is a good substitute.
    • Leeks: Think of leeks as sweet, mellow onions. We’ll use the white and light green parts, saving the tougher dark green tops for stock. Check out my article about how to clean leeks for more tips!
    • Potatoes: Use any kind you have. Yukon Gold potatoes will make it extra creamy, but russets break down easily for a nice texture, too.
    • Broth: Either chicken broth or vegetable broth works perfectly here.
    • Spices: Don’t be shy with the salt and pepper! A pinch of nutmeg adds a subtle warmth, and half a bay leaf is plenty for flavor.

    How to Make Potato and Leek Soup

    Tip 1: Throughly clean your leeks. Leeks tend to trap sand, so I always clean them thoroughly. My go-to method is slicing them in half lengthwise, which makes it easier to rinse away any hidden grit. If you need a visual guide, check out my article on cleaning leeks.

    Tip 2: Cook the leeks until soft. Once your leeks are clean and chopped, this soup comes together quickly. Start by cooking the leeks in butter until they’re very soft, then add the rest of the ingredients and simmer until the potatoes are tender.

    Tip 3: Blend half of the soup for the best texture. I’m a big fan of textured soups. While many potato leek soup recipes call for blending until silky smooth, I prefer a heartier, more rustic approach. I leave plenty of potato chunks and sliced leeks in the pot. We blend about half the soup to thicken it up and add creaminess while leaving the rest chunky for texture.

    We love this potato and leek soup recipe with butter, leeks, potatoes, stock, and spices. This soup is so creamy and comforting. There’s no cream needed, but if you want to make this more decadent, add a little crème fraîche, sour cream, or cream to your bowl before serving.

    You Will Need

    3 tablespoons butter or olive oil

    3 large leeks

    2 medium-to-large russet potatoes, peeled and chopped into ½-inch cubes

    6 cups stock or broth, see our chicken stock or vegetable broth

    Half of a bay leaf

    Salt and fresh ground black pepper

    Pinch freshly ground nutmeg

    Crème fraîche, sour cream, or cream for serving, optional

    Directions

    • Prepare Leeks
    • 1Cut away the stem and dark green parts of the leeks. Discard the stem and save the green tops for stock or broth. We only need the light green and white parts of the leeks for this recipe.

      2Slice the leeks into half, lengthwise, and then run cold water over them, using your fingers to release any dirt stuck inside the layers.

      3Slice the leeks into 1/4-inch thick half-moons.

    • Prepare Soup
    • 1Melt the butter in a large saucepan or Dutch oven over medium heat.

      2Stir in the leeks and 1/4 teaspoon of salt. Reduce the heat to medium-low, and cook, stirring frequently, until very soft but not browned, 10 to 15 minutes. If the leeks begin to brown, lower the heat a bit more.

      3Stir in the potatoes, stock, and 1/4 teaspoon of fresh ground pepper. Add half of a bay leaf, and then bring it to a boil. Reduce the soup to a low simmer, and cook uncovered for 10 to 15 minutes or until the potatoes are tender.

      4Taste the broth and season with additional salt.

      5Blend one-third of the soup, and then stir back into the pot. Stir in a bit more ground pepper and a pinch of nutmeg. Serve.

    Chilled Pea Soup Recipe with Shrimp

    This soup is best served cold, but it is quite delicious hot. We roast the shrimp for this — you can see how we do it by looking at our roasted shrimp recipe.

    Makes approximately 4 servings

    You Will Need

    Pea Soup

    1/2 cup sliced shallots (1 to 2 large shallots)

    1/4 cup sliced garlic (4 to 6 cloves)

    1 tablespoon coriander seeds, toasted

    1 Anaheim pepper, sliced, seeds and stem included

    4 cups shelled English peas or thawed frozen peas

    3 1/2 cups creme fraiche

    1/4 cup packed whole mint leaves

    Salt and fresh ground black pepper


    For Serving

    2 cups cooked shrimp, see our roasted shrimp recipe

    1/4 cup finely sliced mint leaves

    Extra-virgin olive oil

    2 limes, zested and juiced

    1/2 cup pea shoots

    1 red chili, minced, optional

    Salt and fresh ground black pepper

    Directions

    • Make Soup
    • 1Bring a large pot of salted water to a boil over medium heat. Add the shallots, garlic, coriander seeds and sliced pepper. Bring the water back to a boil then add the peas and cook until the peas are tender but not mushy, about 45 seconds.

      2Using a slotted spoon or spider, add the pea mixture to a blender with about 1/2 cup of the liquid. Add 3 to 4 grinds of fresh black pepper, the the creme fraiche and mint leaves. Puree until smooth, adding more liquid as needed.

      3Add soup to a bowl set over a larger bowl filled with ice water. Stir the soup until chilled. Or refrigerate until well chilled.

    • Serve Soup
    • 1Toss the shrimp, a drizzle of olive oil, lemon zest, lime juice, pea shoots, chili and a sprinkle of salt and pepper together in a bowl.

      2Taste the chilled soup and adjust with more salt and/or pepper as needed then divide between bowls. Add a handful of the shrimp salad to the middle of each bowl.

    Roasted Tomato Soup with Lemon and Thyme

    After sharing this Cardamom Roasted Tomato Pasta we wanted to try another recipe combining roasted tomatoes and citrus. Instead of cardamom and lemon (like in the pasta), we went with lemon and fresh thyme for this easy roasted tomato soup. We thought about calling this “adult soup” since it is a bit different from a more traditional creamy tomato soup. This soup is much lighter and tastes fresh thanks to the lemon.

    How to Make Roasted Tomato Soup with Lemon

    To make the soup, we used our new favorite kitchen gadget, the OXO Food Mill on the coarsest setting. You can use a blender, but we prefer the texture you get from using the food mill.

    How to Make Roasted Tomato Soup with Lemon and Thyme

    To make the soup, we start roast lots of tomatoes with thyme, garlic and a few strips of lemon zest. Since we’re using the food mill, you don’t need to remove the skin from the garlic cloves. It will catch the skin when we blend the soup. If you are using a blender, you might want to remove the skins now.

    Roasting the tomatoes

    Add olive oil, salt and pepper then roast until the tomatoes begin to caramelize around the edges. While they roast, cook some onions in a large pot then add the roasted tomatoes and garlic. Here’s another roasted tomato soup recipe, made with onion, garlic, and basil.

    Pour in some chicken stock and a large can of tomatoes. Simmer then pass the soup through a food mill. By the way, if you do use a food mill, don’t forget to scrape underneath the mill when you are done. You don’t want to miss all that good stuff.

    Add the soup back to the pot and pour in some half and half for a little creaminess — coconut or almond milk would work as well.

    This tomato soup with lemon and thyme taste fresh and bright. When zesting the lemon, use a vegetable peeler for 1/4-inch wide strips of zest. If you have one on hand, a food mill, using the coarsest blade, creates nice thick texture. You can also use an immersion blender or blender as a substitute.

    Makes approximately 6 servings

    You Will Need

    3 pounds ripe tomatoes, quartered

    4 sprigs fresh thyme or 2 teaspoons dried

    4 whole garlic cloves, skins removed

    4 strips lemon zest, each 1/4-inch wide and 2 inches long

    4 tablespoons extra-virgin olive oil

    2 medium onions, chopped

    1 (28-ounce) can whole tomatoes with juice

    4 cups low sodium chicken stock or vegetable stock, see our easy chicken stock recipe

    1/4 cup half and half or non-dairy milk such as almond and coconut

    Salt and fresh ground pepper

    1/4 cup feta or blue cheese crumbles for serving, optional

    Directions

    • Roast Tomatoes
    • 1Heat the oven to 400 degrees F.

      2On a baking sheet, toss tomatoes, garlic, thyme sprigs, lemon zest, 2 tablespoons of olive oil and about 2 teaspoons of salt together. Spread into one layer and roast until the edges of the tomatoes begin to caramelize, about 45 minutes.

      3Meanwhile, cook onions with 2 tablespoons of olive oil in a large pot until softened and starting to brown, about 10 minutes.

    • To Finish
    • 1Add the oven-roasted tomatoes and garlic, including the liquid on the baking sheet, canned tomatoes and chicken stock to the onions. Bring to a simmer and simmer, uncovered, for 30 minutes.

      2Pass the soup through a food mill fitted with the coarsest blade or blend using an immersion blender or blender. Add back to the pot then stir in half and half (or non-dairy milk). Taste the adjust with salt and/or pepper. Serve with cheese crumbles on top — optional.

    This roasted cauliflower soup recipe is close to my heart. It’s rich and creamy, super easy to make, and tastes amazing!

    For this easy cauliflower soup, we roast a whole head of cauliflower until golden brown and blend with onion, parmesan cheese, and broth until silky smooth.

    We have so many cauliflower recipes on Inspired Taste, and honestly, I love them all, but this soup is the one I go to when I need a little comfort. A big bowl of this soup makes the day melt away.

    Key Ingredients

    • Cauliflower: I use one large head of cauliflower for this soup, which means you’ll get 4 generous servings.
    • Garlic and Thyme: Since I roast the cauliflower for this soup, I take the opportunity to toss a few garlic cloves and fresh thyme onto the baking sheet. They add so much flavor!
    • Onion and Celery: Once the cauliflower has finished roasting in the oven, we cook onion and celery with a pinch of red pepper flakes and salt, adding more nutritious vegetables to the soup and flavor.
    • Broth: I love using a light broth so that the cauliflower shines. I especially love this easy chicken broth and this delicious veggie broth.
    • Butter: I don’t add cream to this cauliflower soup, but I do add butter. Use a good-quality European-style butter or your favorite plant-based butter.
    • Lemon Juice: A squeeze of fresh lemon juice brings this soup together. We highly recommend it.
    • Cheese: I love adding parmesan cheese, but you can substitute it for another kind of cheese or leave it out altogether.

    A Pot of Creamy Cauliflower Soup

    How to Make the Best Roasted Cauliflower Soup

    Tip 1: Roast garlic and cauliflower. This cauliflower soup starts with roasting a whole head of cauliflower. I don’t pay too much attention to how well I chop the cauliflower. Slicing it into cauliflower steaks or slabs is the quickest way. Then we toss them with olive oil, salt, thyme, and whole garlic cloves (you can leave the peel on for now). As the garlic roasts in the oven, it softens and becomes sweet (like in our whole roasted garlic recipe)

    The cauliflower and garlic roast in a hot oven for 20 to 25 minutes, so it’s pretty quick. When it is nearly finished roasting, you can prepare the remaining ingredients.

    Roasted Cauliflower Ready for Cauliflower Soup

    Tip 2: Build flavors. Just as the cauliflower and garlic is finishing in the oven, in a soup pot, cook roughly chopped onion and celery in butter (or olive oil) until soft. The roasted garlic will have softened a lot, so you can easily squeeze the soft garlic cloves to the pot. Then, pour in broth and add the roasted cauliflower. I have two favorite homemade broths for this: veggie broth or chicken broth.

    Tip 3: Blend until creamy. Let the soup simmer for 10 minutes, then blend it into a smooth, decadent soup. I love adding some fresh lemon juice and parmesan cheese, but you can adjust the seasoning with fresh herbs, another kind of cheese, or leave it plain. You can see from the photos that the cauliflower soup is super creamy without having to add any cream!

    You Will Need

    1 large head cauliflower, about 2 pounds

    4 tablespoons olive oil

    1 teaspoon fresh thyme leaves or 1/4 teaspoon dried thyme

    4 garlic cloves, left unpeeled

    1/2 large onion, chopped, about 1 ¼ cups

    1 celery stalk, chopped, about 1/2 cup

    Pinch crushed red pepper flakes, optional for heat

    4 cups (946ml) vegetable broth or chicken broth

    2 tablespoons butter

    1 tablespoon fresh lemon juice, or more if needed

    1/4 cup grated parmesan cheese, plus more for serving, optional (1/2 ounce)

    Directions

      1Preheat the oven to 425°F (220°C) and prepare a baking sheet. We roast the cauliflower directly on the baking sheet, but for easy cleanup, line it with parchment paper or a silicone baking mat.

      2Remove the larger leaves from the cauliflower and leave the core intact. (You can save the leaves to blend into the soup later.)

      3Slice the cauliflower in half and cut it into 3/4-inch thick slices.
      Drizzle two tablespoons of olive oil onto the baking sheet, then arrange the cauliflower on top of the oil.

      4Add the unpeeled garlic cloves (they will roast in their peels) and the thyme, then drizzle over two more tablespoons of olive oil. Move the cauliflower slices around so they each have a chance to touch some oil.

      5Roast for 20 minutes or until the bottom of each slice looks well browned. Flip each piece, and then roast for 5 minutes more.

      6Melt two tablespoons of butter in a deep soup pot over medium heat. Then, stir in the onions, celery, pinch of red pepper flakes, and 1/4 teaspoon salt. Cook until softened, about 5 minutes.

      7When they are cool enough to handle, squeeze the garlic from inside each clove and place it in the soup pot. Discard the garlic peel.

      8Transfer the roasted cauliflower to the pot and pour in the broth. If you saved any cauliflower leaves from earlier, add them to the pot. Bring to a simmer and cook for 10 minutes.

      9Turn off the heat, and add the cheese and two tablespoons of lemon juice.

      10Blend the soup until smooth. An immersion blender is the easiest, or you can use a blender. If you use a regular blender, it is best to blend in batches and fill the blender less than you usually would since the soup is so hot. We like to remove the lid’s center insert and cover it with a kitchen towel while blending. This helps to release some of the steam and prevents the blender lid from popping off (which can be a big, hot mess).

      11Taste the soup and add more lemon juice, salt, and pepper until the flavor pops (it should make you smile). Serve with more cheese, a few grinds of black pepper, and a drizzle of olive oil on top.

    Adam and Joanne’s Tips

    • Storing: This cauliflower soup lasts in your refrigerator for up to 5 days. It can also be frozen for up to one month, probably longer.
    • Soup is too thick: Add 1/4 cup to 1 cup of water. Add enough water to achieve your preferred thickness. The water will not water down the flavor of your soup, but if you are concerned or have more on hand, you can use stock or broth.
    • Vegetarian adaptations: Use vegetable broth, a vegetarian-friendly cheese or leave it out altogether.
    • Vegan adaptations: Use vegan broth, vegan butter and vegan cheese or a couple tablespoons of nutritional yeast instead (my preference).

    Creamy Pea Soup Recipe with Basil

    This soup is perfect for spring and summer. We use frozen peas, but if you have access to them, fresh peas would be lovely.

    Just after blending, we stir in some cream. The soup is quite delicious without it, the cream just rounds out the flavors and makes it luxurious and creamy.

    Creamy Pea Soup Recipe with Basil

    This simple pea soup is adapted from Giada De Laurentiis. We call for frozen peas, but if you are lucky enough to have fresh peas, use them. This is especially good when topped with a few crumbled of feta cheese or fresh goat cheese.

    Makes approximately 4 servings

    You Will Need

    2 tablespoons olive oil

    1 medium onion, chopped

    2 garlic cloves, minced

    1 teaspoon sea salt

    1/2 teaspoon fresh ground black pepper

    4 cups frozen peas (from two 10-ounce packages)

    3 cups chicken stock, see our homemade chicken stock recipe

    3/4 cup chopped fresh basil leaves

    1/2 cup cream

    Crumbled feta cheese or fresh goat cheese, for serving

    Directions

      1Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the onions and cook until softened, about 8 minutes. Stir in the garlic, salt and pepper then cook for 1 minute.

      2Add the peas and chicken stock then bring to a boil. Reduce the heat to medium-low and cook at a low simmer, uncovered, for about 5 minutes.

      3Remove the pot from the heat, add the basil and use an immersion blender to blend until smooth (or use regular blender). Stir in the cream, taste the soup and adjust with more salt and/or pepper. Divide between bowls and top with a little ricotta cheese or goat cheese crumbles.
