This is the wedge salad recipe we are always happy to eat. Crispy lettuce, a thick homemade dressing, bacon, and a quick tomato-onion pickle. It’s a good one!

Wedge Salad

Take us to a classic steakhouse, and there’s a very good chance at least one of us will order a wedge salad. We’re picky about it, though. The lettuce should be generous, the dressing needs to be thick and seriously blue cheesy, and tomatoes are a must (bacon is also up there on the expectations list).

We eat this homemade wedge salad for dinner, sometimes on its own or alongside some protein like grilled steak or baked salmon.

Key Ingredients

  • Iceberg Lettuce: The classic choice for wedge salads! Grab a larger head and remove any tattered or browned leaves. Then, trim the bottom so the stalk isn’t brown. Slice into four wedges, and you are ready for the salad. Halved romaine lettuce hearts are great, too.
  • Bacon: We love thick-cut bacon for this and usually cook it in the oven, which creates less mess than in a skillet. Cook your bacon until crisp, then chop it to top the salad.
  • Tomato: Use the best tomatoes available. We’ve shown a medium slicer tomato in the photos, but cherry tomatoes or heirloom tomatoes are also excellent.
  • Onion: We prefer sweet onions and quickly pickle them for 5 minutes to tone down their raw, sharp flavor. Yellow or red onions work nicely, too.
  • Blue Cheese Dressing: We use our homemade blue cheese dressing and highly recommend you do, as well. It’s easy to pull together and tastes much better than what’s sold at the supermarket. You’ll need mayo, sour cream (or yogurt), blue cheese, lemon juice, and parsley. Then, to thin it a little, a bit of milk or buttermilk. When shopping for blue cheese, we prefer buying wedges rather than pre-crumbled cheese, and especially love gorgonzola.

How to Make a Wedge Salad

Tip 1: Make a tomato-onion quick pickle. The first step to making our wedge salad recipe is to combine thinly sliced sweet onion, chopped tomatoes, a bit of rice wine vinegar, and a pinch of salt. Then set this aside while you make the dressing and salad. As the onion sits, it softens, and the raw flavor tones down a little, and the tomato releases some of its juices (which are wonderful spooned over the salad).

Tip 2: You can make the dressing ahead. Our dressing below sits well in the fridge for up to a week. It also only takes 5 minutes to make, so if you are up for a quick meal-prep session, make the dressing, and you will be one step closer to a homemade wedge salad later on in the week. As you make it, you’ll notice it’s quite thick. Add a tablespoon or two of milk to thin it out a bit, or wait until you are ready to build your salad and thin it out then.

Wedge Salad Ingredients

Tip 3: Assembling the salad. Place your wedge of iceberg onto a plate, then drizzle the thick, creamy dressing over it, making sure to get it into the nooks and crannies of the lettuce. Then pile on your pickled onion and tomato, chopped bacon, fresh herbs, and more blue cheese (if you like). Finish with a pinch of freshly ground black pepper and enjoy! By the way, you can also cut your lettuce into slabs, like we do for this strawberry iceberg salad.

Serving Suggestions

This salad makes a fantastic appetizer, but we mostly enjoy it as our main meal with a little extra protein added to it. Think a side of lemon dill salmon, juicy chicken breasts, marinated steak, or grilled chicken.

We’re always happy with a really good wedge salad. Iceberg sometimes gets a bad rap, but it’s perfect with the bacon and thick homemade dressing here. You can make the dressing up to a week in advance, and if you’d like to lighten things a bit, plain thick yogurt (like Greek or Icelandic) works well as a substitute for sour cream.

Serves 4

You Will Need

¼ small sweet onion, thinly sliced into quarter moons

1 medium tomato, chopped (about 1 cup)

1 tablespoon rice wine vinegar

Fine sea salt and freshly ground black pepper

¼ cup mayonnaise (try homemade mayo)

¼ cup sour cream

1 tablespoon fresh lemon juice

2 ounces blue cheese, crumbled (about ½ cup), plus more for serving

1 tablespoon minced fresh parsley

1 to 3 tablespoons milk or buttermilk

1 large head iceberg lettuce, browned outer leaves removed, cut into 4 wedges

4 slices thick-cut bacon, cooked until crispy and chopped

Fresh herbs, like dill, chives, or parsley, for serving (optional)

Directions

    1In a small bowl, toss the onion and tomato with the rice wine vinegar and a pinch of salt. Set aside to pickle.

    2Make the dressing. In a medium bowl, stir together the mayonnaise, sour cream, lemon juice, blue cheese, parsley, a pinch of salt, and a pinch of pepper. Add enough milk to thin for a thick, drizzly dressing.

    3Set a wedge of lettuce onto four plates. Generously drizzle the dressing over it, then top with the pickled onion and tomato (and some of the juices from the bottom of the bowl), chopped bacon, more blue cheese crumbles, and fresh herbs. Add a good pinch of pepper, then serve.

Our tomato feta salad with honey mustard lime vinaigrette is a true showstopper. It combines peak-season tomatoes, fresh basil, a simple homemade dressing, and the surprising, creamy texture of grated feta for a truly standout dish.

Tomato Feta Salad

As proven by all our tomato recipes, we’re obsessed and especially get excited during the summer when tomatoes are in full season. This recipe is a fun twist on classic tomato salad. We keep the tomatoes and basil but go rogue with the dressing and make a zesty honey mustard lime vinaigrette, which works beautifully with the tomatoes and feta cheese.

The secret to this salad is to use the large holes on your box grater and grate the feta over the tomatoes on your plate. The thin gratings of feta melt in your mouth with each bite of tomato. We can all thank Chef Richard for the tip, and you can be sure that I’ll be grating my feta over salads from now on. Key Ingredients

  • Tomatoes: Choose slicer or juicy heirloom tomatoes for this salad. You’ll slice them into rounds before drizzling with the vinaigrette. When shopping for tomatoes, you want them to feel heavy for their size and really smell like a tomato (if you take a sniff and they don’t smell like anything, the tomato won’t taste that great).   • Basil and Onion: Sweet Italian basil is lovely, or substitute Thai basil or purple basil (really pretty!). Then, for the onion, use a sweet onion, such as Walla Walla or Vidalia, if you can get your hands on one.
  • Feta: Use block feta cheese sold in brine. You’ll grate the feta over your salad using a box grater. This shreds it into thin strips, letting you enjoy its salty, briny kick with every bite. If you don’t have a box grater, you can crumble the cheese instead.
  • Honey Mustard Lime Vinaigrette: You can make the vinaigrette in a bowl with a whisk or shake it all together in a glass jar. It combines fresh lime juice (from 1 lime), honey (maple syrup is a good substitute), salt, cumin, Dijon mustard, and extra-virgin olive oil.

When tomatoes are in season, I’m all about enjoying them in every way possible. This tomato feta salad is a standout, especially when made with our honey mustard lime vinaigrette. It’s particularly perfect for larger tomatoes like heirlooms. The secret? We use a box grater to thinly shave the feta directly over the salad. This makes the feta so delicate it practically melts in your mouth with each bite of tomato. I highly recommend it! No problem if you don’t have a box grater. 2 large servings or 4 small salads

You Will Need

3 medium heirloom tomatoes, about 1 pound

1/2 cup thinly sliced onion, preferably sweet onion

2 ounces block feta cheese

14 basil leaves, torn

1 lime, juiced, about 2 tablespoons

1 ½ tablespoons honey

1/4 teaspoon fine sea salt

1/4 teaspoon ground cumin

1 teaspoon Dijon mustard

2 tablespoons extra-virgin olive oil

Maldon flaky sea salt, as needed

Directions

    1Make the lime vinaigrette: Combine the juice of lime juice, honey, salt, cumin, Dijon mustard, and olive oil in a medium bowl. Whisk well until emulsified (or add to a glass jar, close the lid, and shake until emulsified).

    2Add the onions: Drop the sliced onions into the vinaigrette and mix well. (This will tone down the raw flavor of the onion a bit).

    3Prepare the tomato salad: Slice the tomatoes into 1/4-inch thick rounds and lay them on a large platter or plate. Spoon some of the vinaigrette and onions over the tomatoes and sprinkle with a pinch or two of flaky sea salt (like Maldon). Scatter the basil over the tomatoes. Then, grate the feta cheese over the top using the large holes of a box grater or crumble it with your fingers. Serve.

Chicken and Avocado Salad with Lime and Cilantro was inspired by a recipe my sister Pam discovered on Pinterest! And my version of this tasty salad is a recipe I’ve made over and over since Pam first told me about it. She sent me an e-mail that had just a list of ingredients. So I worked on the salad and made up my own amounts and directions!

My version of this favorite salad has chunks of chicken and avocado, and I mix the lime and mayonnaise to make a dressing. And my family has some cilantro avoiders, so I often make an equally-delicious version without cilantro. Through the years I’ve made this chicken and avocado salad for so many parties. And if you like these ingredients, I bet this salad is going to be a keeper for you too!

The salad became so popular on the site that a few years ago I decided I should improve the photos. I also realized now I usually make a slightly larger amount than the original recipe. So this recipe is the new-and-improved version of this chicken and avocado salad, with slightly more chicken, avocado, and cilantro than the original version. Feel free to adjust ingredients and amounts any way that suits your fancy! And I think this combination will be good no matter how you switch it up!

How to make this chicken and avocado salad without Cilantro:

If you’re one of those people with the anti-cilantro tastebuds, simply triple the amount of green onion and skip the cilantro. This salad will still be amazing without cilantro, I promise!

Can you make this salad with rotisserie chicken?

Yes, I highly recommend using rotisserie chicken for this salad if you don’t want to take time to poach some chicken breasts. I’ve made this with rotisserie chicken I cut up myself and also with the pre-cut rotisserie chicken that comes in a big pack at Costco!

How long will Chicken and Avocado Salad keep in the fridge?

I’ve enjoyed this salad for lunch when it had been in the fridge overnight. But the avocado is a fragile ingredient and I don’t think it would last in the fridge for more than a day or two, and this salad is always best freshly made.

How low in carbs is the Chicken and Avocado Salad?

This amazing salad is not only extra flavorful but the salad only has 2 net carbs per serving and 18 grams of protein!

How to make Chicken and Avocado Salad with Lime and Cilantro:

  1. I used three cups of diced chicken rotisserie chicken from Costco, and we cut it into chunks of chicken that weren’t too small.
  2. Dice up 2 medium avocados, and toss them with fresh-squeezed lime juice. 
  3. Slice the green onion. (Use about 3/4 cup sliced green onion if you’re skipping the cilantro.
  4. Chop up fresh cilantro. (We chopped the cilantro very fine so the cilantro flavor would be all through the salad.)
  5. I mixed mayo and fresh squeezed lime juice to make the dressing; use more or less dressing to taste. (Remember there is already some lime juice on the avocado, so if you’re not that crazy about lime you could use a bit less.)
  6. Put chicken in a bowl large enough to hold all the ingredients, add sliced green onions and dressing and mix well, so all the chicken is coated with dressing.
  7. Add avocado with the lime juice that’s in the bottom of the bowl and mix gently to combine.
  8. Then add finely chopped cilantro and gently mix again, just until it’s barely combined. Season with salt to taste.
  9. Serve the salad right away or chill for a few hours before serving.
  10. This salad will keep in the fridge for a day, although the avocado is best when it’s freshly made.

Make it a Low-Carb Meal:

Chicken and Avocado Salad with Lime and Cilantro could be a nice side dish for a pot-luck. But if you wanted to use it as a main dish salad I’d serve with something like Olive Bread, Savory Almond Flour Bread, or Low-Carb High-Fiber Savory Muffins on the side.

More Salads with Chicken or Avocado:

Ingredients

  • 3 cups cooked chicken, cut into large pieces
  • 2 medium avocados, diced
  • 3 T fresh squeezed lime juice, divided
  • salt, to taste
  • 1/4 cup thinly sliced green onion
  • 1/2 cup finely chopped fresh cilantro (see notes)
  • 3 T mayo (see notes)

Instructions

  1. Cut up enough chicken to make 3 cups of chopped chicken. I like it cut into fairly large chunks.
  2. Dice the avocados into medium-sized pieces, put in small bowl, mix with 1 T of the lime juice, and season avocado with salt to taste.
  3. Thinly slice the green onion and finely chop the cilantro (if using).
  4. Mix 3 T mayo and 2 T lime juice to make the dressing. (If you’re not a huge lime fan like I am, you might want to start with less lime and taste, adding more until it seems sour enough for you.
  5. Put the chicken into a bowl large enough to hold all the salad ingredients.
  6. Add the sliced green onions and dressing and toss until all the chicken is coated with dressing.
  7. Add the avocado and any lime juice in the bottom of the bowl and gently combine with the chicken.
  8. Then add the chopped cilantro and gently mix into the salad, just until it is barely combined. Season with salt to taste.
  9. Serve right away or chill for a while before serving.  This could be served inside pita bread or sandwich bread, or inside crisp lettuce cups, but we just ate it as a salad.
  10. Chicken and Avocado Salad will keep in the fridge overnight, but the avocado is best when it’s freshly made. When I make it I rarely have leftovers, but if you’re only making for one or two people you might want to cut the recipe in half.

Notes

If you’re not a cilantro fan just triple the green onion and skip the cilantro completely.

If you like a lot of dressing on your salads, you might want to slightly increase the dressing amounts.

Here’s the Napa cabbage salad recipe I’ve been making on repeat. It’s remarkably tasty for how easy it is to throw together, and the sesame in the dressing will have you going back for more!

Easy Napa Cabbage Salad

I’ve fallen so hard for this cabbage salad, and I think you will, too. I’m always on the hunt for super simple, quick-to-prepare sides, and this Napa cabbage salad with garlic and sesame is hitting it out of the park.

This truly is a low-effort dish. Just a quick massage of toasted sesame oil, grated garlic, and salt into the cabbage rewards you with a sweet, toasty, and delicious salad. It pairs incredibly well with grilled meats, chicken, and seafood, and I especially love it with meaty or umami-rich dishes, such as grilled steak and pork chops made with this pork marinade.

Key Ingredients

  • Napa Cabbage: I adore cabbage, made evident by the many cabbage recipes we have, but Napa cabbage holds a special place in my heart. It’s lighter on its feet and wonderfully crunchy, making it an incredibly refreshing base for salads.
  • Sesame Oil and Sesame Seeds: I love the deep, toasty notes that toasted sesame oil adds to this salad. It brings a rich, nutty flavor that makes it incredibly hard to stop eating! To really lean into the sesame, we also toss in some toasted sesame seeds.
  • Garlic and Green Onions: A finely grated garlic clove, massaged into the cabbage, adds so much flavor, but don’t worry, it doesn’t overpower the salad. Half of a large head Napa Cabbage, about 1 pound, about 8 cups sliced

3 tablespoons sesame seeds

1 ½ tablespoons toasted sesame oil, or more to taste

1 medium garlic clove, finely grated, about 1/4 teaspoon grated

1/4 teaspoon fine sea salt, or more to taste

1/4 teaspoon fresh ground black pepper

2 green onions, thinly sliced

Directions

    1Prepare the cabbage: Remove the core of the cabbage. Cut lengthwise into 1-inch ribbons, then slice crosswise into 1-inch thick pieces. Rinse under cool water and pat very dry or spin dry using a salad spinner (wet cabbage will water down the salad).

    2Toast the sesame seeds: Add the sesame seeds to a small skillet over medium-low heat and toast, stirring frequently, until golden brown and fragrant, 2 to 4 minutes. Keep a close eye on them, as they can burn quickly.

    3Make the salad: In a large bowl, add the cabbage, toasted sesame seeds, 1 ½ tablespoons of toasted sesame oil, the grated garlic, 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and thinly sliced green onions. Toss and lightly massage everything together until well combined. Taste and adjust with more salt or sesame oil if needed. As the cabbage is massaged and sits with the salt, it will reduce in size.

Today I’m reminding you about this amazing Chicken Salad with Basil! This is a recipe you should make as soon as you see basil plants showing up in the grocery store. OR if you have basil growing in your garden, you can make it it all summer long! 

I’m a huge fan of fresh basil, and I’ve been growing basil and freezing the basil for many years, so I’m excited when basil season gets started every year. And this basil-loaded chicken salad recipe is one of my favorite summer salads. Through the years I’ve decided you just can’t ever put too much chopped basil in this salad.

And yes, I used the word SUMMER, but please don’t hesitate to make this salad any time you have chicken and fresh basil on hand! If you have to buy basil in the grocery store you can get away with using less in this recipe. But please try it if you’re a fan of these flavors. I could eat this over and over again and never get tired of it!

How to make Chicken Salad with Basil:

  1. You can make the salad with leftover rotisserie chicken if you have some.
  2. If you’re starting from scratch, trim chicken breasts and cut into thirds lengthwise. I used a mixture of canned chicken broth and water to cook the chicken, combined with 2 teaspoons of Italian Herb Blend(affiliate link). You could use poultry seasoning if you don’t have the Italian blend.
  3. When the liquid comes to a boil, add the chicken and cook at the barest simmer until it’s cooked through, about 15 minutes.
  4. Drain the chicken into a colander and let it drain very well.
  5. Then cut the chicken into cubes about 3/4 inch square.
  6. I used Herb Scissors (affiliate link) to cut the basil into thin strips. If you’re using basil from the garden, give it a wash in a Mini Salad and Herb Spinner (affiliate link).
  7. After you slice the fresh basil, chop the green onions, and prepare freshly-grated Parmesan.
  8. Whisk together the mayo and buttermilk (or milk) so it’s smooth; then stir in the basil strips, chopped green onion, and a Parmesan.
  9. Gently stir the dressing into the cubes of chicken, season to taste with salt and fresh-ground black pepper, and serve.
  10. This Chicken Salad with Basil can also be chilled for a few hours before serving; enjoy!

Ingredients

  • 4 cups diced cooked chicken, cut in 3/4 inch pieces (If you’re cooking the chicken for this recipe, see notes below.)
  • 3/4 cup mayo
  • 1/4 cup buttermilk (or milk, but I like the tang of the buttermilk)
  • 1/2 cup sliced green onion
  • 1/2 cup sliced fresh basil leaves (or more)
  • 3 T coarsely grated Parmesan Cheese
  • salt and fresh ground black pepper to taste

Instructions

  1. If you’re cooking chicken for this, trim visible fat from 4 chicken breasts, then cut the chicken lengthwise into thirds.  Put the can of chicken stock, 2 cans of water, and the Italian Herb Blend (affiliate link) or poultry seasoning into a small sauce pan and bring to a boil.  When it boils add chicken breasts, turn heat to low, and  let simmer 15 minutes, or until the chicken is cooked through.  Drain the chicken into a colander placed in the sink and let it cool.
  2. While the chicken cools, slice the basil leaves or cut with Herb Scissors (affiliate link) and wash if needed, chop green onions, and measure the freshly-grated Parmesan.
  3. When chicken is cool, dice it into pieces about 3/4 inch square and place into medium-sized bowl.
  4. Combine mayo and buttermilk (or milk), whisking until it’s smooth. 
  5. Then stir in green onion, Parmesan, and basil.
  6. Add dressing to the chicken in the bowl and gently mix until chicken is well coated with dressing.
  7. Season with salt and fresh ground black pepper.
  8. This salad with chicken, basil, and Parmesan can be served immediately or chilled slightly before serving. 
  9. This will keep in the fridge for about a day, but it’s best freshly made.

  • Don’t overcook the green beans. Two to three minutes is plenty. Rinse them under cold water the moment they come out of the pot.
  • Watch the garlic. It goes from fragrant to bitter in seconds. Medium heat, 30–60 seconds, then off the heat.
  • Make it vegan: Just leave out the feta, or use a good-quality vegan alternative.
  • Add more protein: Chickpeas tossed through make this a more substantial meal. White beans also work beautifully.

Curried Chicken Salad is a recipe I’ve been waiting to feature, because in Utah we kept getting rainy weather so I thought cold chicken and asparagus salad might be pushing it. But I noticed when I checked my blog stats that a few salad recipes had gone crazy on Pinterest, so I decided some of you are ready for salads!

I’m a huge salad fan, and some of my favorite restaurant meals are salads that I order over and over and never get tired of. And when I ate leftovers from this salad for breakfast the day after we shot the new photos, I wished there had been a bit more left!

We made a few changes to this salad recipe when we updated it, including switching out the peanuts in the original salad for pine nuts, which were an amazing change! Here’s the printer-friendly version of the original recipe, in case anyone was a fan of the older version.

How to make Curried Chicken Salad:

  1. Cut asparagus on the diagonal into pieces and then blanch in salted water.
  2. While you’re waiting for water to come to a boil and cooking asparagus, zest the lemon and squeeze the juice. You can use a fine cheese grater if you don’t have a lemon zester (affiliate link).
  3. Whisk together ingredients to make the curry dressing.
  4. After three minutes, drain asparagus well.
  5. Lay out a paper towel on the counter and spread out the asparagus, then cover with another paper towel and blot away as much water as possible.
  6. Let asparagus cool while you cut up enough cooked chicken to make 4 cups.
  7. Slice green onions on the diagonal and measure out the pine nuts (or nuts of your choice.)
  8. Combine diced chicken and asparagus with desired amount of dressing.
  9. Gently stir in the green onion and pine nuts, season to taste with salt and fresh-ground black pepper, and serve.
  10. We saved a few pine nuts to sprinkle on the top!
  11. The Curried Chicken Salad can be kept in the fridge for a few hours before serving, and it was still amazing as leftovers when it had been in the fridge overnight, so if you’re cooking for a few people you could certainly double the recipe.

  • 2 tsp. Dijon Mustard
  • 2 tsp. lemon zest (or a little more)
  • 1/4 tsp. sea salt

Instructions

  1. Bring a pot of salted water to a boil. Hold one piece of asparagus in both hands and bend until it snaps to see where the woody part ends; then trim all the asparagus to that length. Cut asparagus on the diagonal into pieces and then cook in salted water for 3 minutes. (Don’t overcook!)
  2. While you’re waiting for water to come to a boil and cooking asparagus, zest the lemon and then cut lemon in half and squeeze the juice. (Use a fine cheese grater if you don’t have a lemon zester (affiliate link).)
  3. Whisk together buttermilk (or sour cream or Greek yogurt), mayo, lemon juice, curry powder, Dijon mustard, lemon zest and sea salt to make the curry dressing. Start with the original amount of lemon juice and zest and taste to see if you want a bit more lemon.
  4. After it cooks exactly three minutes, drain asparagus into a colander placed in the sink and let it drain well. Then lay out a paper towel on the counter and spread out the asparagus on the towel. Then cover with another paper towel and gently press down to blot away much water as possible.
  5. Let asparagus cool while you cut up enough cooked chicken to make 4 cups.
  6. Slice green onions on the diagonal and measure out the pine nuts (or nuts of your choice.)
  7. Combine diced chicken and asparagus with desired amount of dressing; you may not need all the dressing if you prefer your salads to be fairly dry.
  8. Gently stir in the green onion and pine nuts.
  9. Season the finished salad to taste with salt and fresh-ground black pepper, and serve.
  10. This Curried Chicken Salad can be kept in the fridge for a few hours before serving. It was still amazing as leftovers when it had been in the fridge overnight, so if you’re cooking for a few people you could certainly double the recipe. If you have any extra dressing you might want to add a bit more right when you serve the salad.

Notes

We used rotisserie chicken breast that comes in a package at Costco which makes the salad extra easy to make!

Please use the full amount of sliced green onion; this is so good in the salad!

Tzatziki Cucumber Salad

This creamy cucumber salad recipe, inspired by our tzatziki sauce, has been on repeat lately. It’s super simple to make, goes with almost anything, and, thanks to the Greek yogurt, is healthy!

Key Ingredients

  • Cucumber: I prefer thin-skinned cucumbers like Hot House or Persian varieties for this salad. Garden cucumbers are okay, too, but I peel and remove most of their seeds beforehand since they often have thicker skins.
  • Yogurt: I use full-fat plain Greek yogurt for my homemade cucumber salad dressing. Icelandic-style yogurt is a good substitute as long as it’s a thicker variety. If you’d like, you can use sour cream instead, which will give you a more German-style cucumber salad.
  • Vinegar and Lemon: I enjoy adding both red wine vinegar and fresh lemon juice to my dressing. They really enhance the overall flavor of the salad.
  • Garlic: Since fresh garlic is a key ingredient in tzatziki sauce, I add a small clove to this salad for that extra kick.
  • Dill: Dill is a must-have in my cucumber salad! I prefer fresh dill, but dried dill works just as well (I’ve included substitution tips in the recipe).
  • Onion: I love the pop of color that red onion adds to this salad, but feel free to use any onion you have on hand.
Easy Creamy Cucumber Salad

How to Make Creamy Cucumber Salad

When making cucumber salads, I always salt my cucumbers. Think of it as a quick marinade for the cucumbers. Salting makes cucumbers taste better! We do the same thing with tomatoes (see our bruschetta recipe or this cherry tomato salad).

To do it, toss your cucumber slices with salt in a colander. After 30 minutes, rinse the cucumbers and shake them mostly dry. While you wait for the cucumbers, make the dressing, which also benefits from some extra time.

For the tzatziki yogurt dressing, combine Greek yogurt with garlic, red wine vinegar, lemon juice, dill, and lots of black pepper. Season with a pinch of salt, then set it aside while the cucumbers sit. Since the dressing contains garlic, the extra 30 minutes give the garlic a chance to flavor the dressing.

Tzatziki Yogurt Dressing for Creamy Cucumber Salad

Since we love cucumber and onion salads, we throw in sliced red onion. Like garlic, onion adds flavor, so we add the sliced onions straight to the dressing. This way, while the cucumbers are salting, we take full advantage of the time to infuse as much flavor into the dressing as possible.

When the cucumbers are ready, toss them with the dressing and onions. You can serve the salad immediately or let it sit in the refrigerator for a day. As the salad sits, it becomes more flavorful, but the cucumbers soften. We’re not too worried about that, but it is something to remember.

Creamy Cucumber Salad with Greek Yogurt (Tzatziki cucumber salad)

Easy Creamy Cucumber Salad

My creamy cucumber salad recipe features cucumbers tossed in a creamy, tzatziki-inspired yogurt dressing. Salting your cucumbers for 30 minutes before assembling the salad draws out excess moisture, intensifying their flavor. I highly recommend it!

Makes about 6 cups

You Will Need

1 ¼ pounds cucumber, sliced (2 medium)

1/2 teaspoon fine sea salt, plus more as needed

3 tablespoons thick plain Greek yogurt, we use full-fat

1 tablespoon red wine vinegar

Juice from 1 lemon wedge

1 teaspoon finely minced garlic (1 small clove)

1 tablespoon chopped fresh dill or 1 teaspoon dried dill

Fresh ground black pepper

1/2 cup sliced red onion (1 small onion)

Handful fresh dill and or mint leaves, for serving, optional

Directions

    1Add the sliced cucumbers to a colander and toss with 1/2 teaspoon salt. Set them aside for 30 minutes in the sink or place them over a bowl to drain.

    2Meanwhile, make the cucumber salad dressing. In a large bowl, stir the yogurt, red wine vinegar, lemon juice, garlic, and chopped dill. Season with a pinch of salt and a generous amount of black pepper.

    3Stir the onions into the yogurt dressing, then set aside until the cucumbers are ready.

    4After 30 minutes of salting the cucumbers, rinse them with cold water. Shake off excess water then add to the dressing.

    5Toss the cucumbers until coated in the dressing. Taste, then season with additional salt and pepper, if needed.

    6Serve with more fresh herbs scattered on top. Serve or keep refrigerated for up to 2 days.

Adam and Joanne’s Tips

  • Mint is excellent in this salad. We especially love adding torn or whole mint leaves to the salad before serving.
  • The combination of red wine vinegar and fresh lemon makes the salad more interesting, but you can use one or the other if that is all you have.
  • As the salad sits, the cucumbers release some water, which may slightly thin the dressing. This is perfectly fine, as the cucumber water adds another layer of flavor. If the dressing becomes too thin, stir in another spoonful of yogurt before serving.
