This Greek Lentil Soup recipe might remind you how I’m a long-time fan of lentils, and have some soup recipes using them. But I spotted Greek Lentils with Spinach and Feta in the American Heart Association Healthy Slow Cooker Cookbook (affiliate link). And I couldn’t resist turning that recipe into a soup!

This slow cooker soup with Greek flavors starts with lentils, chopped celery and onion, garlic, vegetable (or chicken) stock, canned tomatoes, and spices. I added more vegetables and stock so it wasn’t as much of a splurge on carbs. And if you chop the vegetables the night the soup is easy to throw in the slow cooker in the morning and let it cook all day.

When you get home, add chopped spinach to the soup with some lemon juice and cook a bit longer, then scoop into bowls, add Feta, and you have a tummy-warming soup for dinner. I’ve never used Feta on soup, but I loved how it added a vibrant burst of flavor. And if you like these Greek flavors, I bet you’ll want to make Greek Lentil Soup over and over!

How to make Greek Lentil Soup in the Slow Cooker:

  1. Start with 2 cups regular brown lentils. (Lentils that are fresher will cook more quickly, so take that into account for timing.)
  2. Finely chop one medium onion and 1 cup of celery. (Do this the night before if you want to get this in the slow cooker early in the morning!)
  3. Put lentils, onions, celery, vegetable (or chicken) stock, Greek Seasoning, Dried thyme, dried oregano, minced garlic, black pepper, and canned tomatoes with juice into the slow cooker.
  4. Cook on high about 4 hours or on low for 8-9 hours, until the lentils are as soft as you prefer. (Slightly longer cooking time won’t matter, either on high or low.)
  5. After nearly 4 hours on high the lentils were soft but still kept their shape.
  6. When the lentils are softened to your liking, chop the spinach (and wash in salad spinner if needed.)
  7. Add chopped spinach to the soup with lemon juice, turn to high if cooking on low, and cook for 30 minutes more.  (Add more stock at this point if the soup seems thicker than you’d like.)
  8. When the spinach is nicely softened, serve Greek Lentil Soup hot, garnished with Feta cheese if you like the sound of that.

Make it a Vegetarian Meal:

Either Olive Bread or Savory Almond Flour Bread would be perfect to serve on the side with this Greek Lentil Soup!

Ingredients

  • 2 cups brown lentils (washed and picked over if needed)
  • 8 cups vegetable broth (or more)
  • 1 medium onion, diced small

Instructions

  1. Chop onions and celery and measure 2 cups brown lentils. (Do this the night before and store in the fridge in a Ziploc bag if you want to get this into the slow cooker quickly in the morning.)
  2. Put the lentils, onions, celery, vegetable broth, Greek Seasoning (affiliate link), dried thyme (affiliate link), dried oregano, minced garlic, black pepper, and canned tomatoes with juice into the slow cooker.
  3. Cook on high for about 4 hours or on low for 8-9 hours, or until the lentils are as softened as you’d like them. (Cooking time will partly depend on how fresh your lentils are; lentils that have been on the pantry or store shelf for a while will take a little longer to cook.)
  4. When the lentils are softened as much as you’d like, chop the spinach and wash in salad spinner if needed.
  5. Add spinach and lemon juice to the soup, turn slow cooker to high if you were cooking on low, and cook about 30 minutes more.  (A little longer won’t hurt, but the longer you cook the spinach the darker green it will get.
  6. Add another cup or two of stock at this point if the soup seems thicker than you’d like.)
  7. Serve the Greek Lentil Soup soup hot, with a tablespoon or two of crumbled Feta sprinkled on each serving if desired.

These tasty Greek Air Fryer Wings are an amazing appetizer or main dish that has those Greek Flavors so many people like! I’ve always enjoyed chicken wings as a low-carb appetizer in a restaurant. But I’m not sure I would have tried making them at home until my brother Rand raved about Greek Wings he made to enjoy as a main dish. And I realized wings would be perfect to cook in the Air Fryer and serve with my favorite Whipped Feta Dip.

I cut down and simplified the inspiring recipe to get Greek wings that are flavorful and also easy to make in the Air Fryer. But I want to emphasize, don’t skip the step of marinating the wings to add amazing flavor! We marinated them overnight the first time we tested the recipe and that worked well. But if that isn’t possible, I recommend a minimum of four hours marinating time (and eight hours or more is even better.)

This recipe uses 1 1/2 pounds of wing pieces which made 16-18 individual wings, but if you’re cooking for a crowd it can definitely be doubled. And whether you serve the wings as an appetizer or a main dish, everyone will love this easy recipe that’s extra low in carbs! Which Air Fryer did I Use?

I’m crazy about the Cuisinart Convection Air Fryer Toaster Oven (affiliate link) which is what I used for this recipe. This air fryer has a large basket, which let me fit 17 chicken wings, and I find this model easy to use. I also like the convenience of having an air fryer that stays out on the counter. What gives these Air Fryer wings the Greek Flavors?

The Greek flavors in this recipe come from olive oil, lemon, garlic, and oregano, which are traditionally used for marinating Greek Lemon Chicken. And if you serve the wings with the Whipped Feta Dip that adds another Greek flavor.

Do chicken wings need to be trimmed?

I bought a six-pack of what Costco called Chicken Party Wings and used two of the packages for this recipe. The Kirkland wings from Costco were pretty well-trimmed, but when I looked at packages of wings at my grocery store it seemed like most of them would need trimming. Personally I enjoy wings the most when they just have a moderate amount of skin, and I always want to trim off some fat.

Can you cook Greek Wings in the oven?

I haven’t tried cooking these wings in the oven, but if you want to try it I would set the temperature at 400F/205C. Then cook the wings on a baking sheet until they’re crispy and the thickest part of the wing has reached a temperature of 165F/75C. Cooking time in the oven will be definitely longer than in the Air Fryer.

How low in carbs are the Greek Air Fryer Wings?

For an appetizer-sized serving of 4-5 wings, this recipe has only 1 net carb and 10 grams of protein! That doesn’t include the Feta Dip, but that’s also extra low in carbs.

How to Make Greek Air Fryer Wings:

  1. I used Kirkland Party Wings, and we used two packs from the six-pack for this recipe
  2. Trim the wings if needed.
  3. Zest a lemon and then squeeze the juice
  4. Whisk together lemon zest (if using), lemon juice, olive oil, garlic, oregano, salt, and pepper
  5. Let wings marinate at least four hours in the fridge; marinating overnight or eight hours is even better
  6. When you’re ready to cook, drain wings and discard the marinade
  7. Let wings come to room temperature and preheat Air Fryer to 400F/205C. (Preheat without the rack in the Air Fryer if you are going to use Air Fryer Parchment Paper, which I recommend.
  8. Line rack with Air Fryer Parchment Paper (if using) and arrange wings so they are not touching each other. (If you have a smaller Air Fryer you may need to cook in two batches.)
  9. Cook wings 8 minutes, or until the first side is getting brown
  10. Remove Air Fryer basket and turn wings over with tongs or a fork
  11. Put basket back in the Air Fryer and cook until second side is golden brown and wings are 165F/75C in the thickest part. (For us that was about 6 minutes on the second side, but other Air Fryer models might take more or less time.
  12. While the wings cook, make the Whipped Feta Dip (or other dip or sauce of your choice.)
  13. Serve the Greek Wings hot, with plenty of napkins!

Make it a Low-Carb Meal:

This recipe makes four appetizer servings, but probably 3 servings if you serve it as a meal. The Greek Air Fryer Wings would taste amazing with one of these side dishes:

Ingredients

  • 1 T freshly-grated lemon zest (optional, but recommended)
  • 1 T fresh-squeezed lemon juice (or more if you really like lemon)
  • 1/4 cup extra-virgin olive oil
  • 1 tsp. minced garlic (or more)
  • 1 tsp. salt (more or less to taste)
  • 1 tsp. dried oregano
  • 1.5 pounds trimmed raw chicken wings (see notes)
  • Whipped Feta Dip with Sumac for serving (optional)

Instructions

  1. Trim the wings if needed. (We didn’t need to do much trimming for the Kirkland Party Wings we used, but some grocery store wings will need to have excess skin and fat trimmed.)
  2. Zest the skin from a lemon and then squeeze the juice. (Or you can use fresh-frozen lemon juice and skip the zest if you don’t want to buy a lemon.)
  3. Whisk together lemon zest (if using), lemon juice, olive oil, garlic, oregano, salt, and pepper to make the marinade
  4. Put the wings and marinade in a large Ziploc bag or plastic container with a snap-tight lid, and let them marinate in the fridge for a minimum of four hours, or marinating them overnight or for eight hours or longer will give more flavor
  5. When you’re ready to cook, drain the wings into a colander place in the sink and discard the marinade. (If you don’t want the oily marinade to go down your sink, catch it in a bowl and discard.)
  6. Let wings come to room temperature while you preheat Air Fryer to 400F/205C. (Preheat without the rack in the Air Fryer if you are going to use Air Fryer Parchment Paper, which I recommend.)
  7. Line Air Fryer rack with Air Fryer Parchment Paper if using. Try to arrange wings in the Air Fryer basket so they are not touching each other. (I was able to fit 18 wing pieces in my Cuisinart Air Fryer, but if you have a smaller Air Fryer you may need to cook in two batches.)
  8. Cook wings 8 minutes, or until they are golden-brown on the first side. (Some Air Fryers cook a bit hotter, so I’d start checking after 6 minutes.)
  9. Remove Air Fryer basket and turn wings over (with tongs or a fork so you don’t burn your fingers.)
  10. Put basket back into the Air Fryer and cook until the second side is golden brown and wings have reached 165F/75C in the thickest part. (For us that was 6 minutes on the second side, but other Air Fryer models might take a bit more or less time.)
  11. While the wings cook, make the Whipped Feta Dip with Sumac (or other dip or sauce of your choice.
  12. Serve the Greek Wings hot, with plenty of napkins!

This butter beans recipe is inspired by shrimp saganaki, a Greek dish that features shrimp (or prawns) cooked in a rich tomato sauce with garlic, onions, and plenty of feta cheese. The word “saganaki” actually refers to the type of pan used to cook the dish. A saganaki is a two-handled frying pan traditionally made of heavy materials like cast iron or copper. In Greek cuisine, “saganaki” can refer to any dish cooked in this type of pan, but it’s most famously associated with fried cheese (like in cheese saganaki) or seafood dishes like shrimp or mussels saganaki.

In this version, I used tender canned butter beans, which I cooked in a rich tomato sauce, garlic, and onion, then topped with briny Kalamata olives and creamy feta cheese. Fresh dill and parsley add a burst of vibrant herby flavor, making this dish not only hearty but also incredibly refreshing. Seriously, for something so simple, this dish is sooooo tasty and was a hit even with my non-bean-loving partner!

Oh, and I used my oven-proof sauté pan, which happens to be two-handled so this dish is as close to saganaki as I am going to get!

Greek butter beans is a perfect cosy dinner, easy enough for a weeknight meal. Serve it with crusty bread to soak up every last bit of the flavorful tomato sauce. It’s equally good the next day so you can enjoy it for breakfast with some fried or poached eggs or simply spread over toasted sourdough.   • Sauté the veggies: Heat oil in an oven-safe skillet, it needs to be fairly deep. Cook onion with salt until softened, then add garlic and cook until fragrant.
  • Make the sauce: Add spices, honey, cherry tomatoes, and cook briefly. Stir in canned tomatoes and simmer until the sauce thickens.

Inspired by our favorite Greek salad, this easy pasta salad combines fresh tomatoes, red onion, olives, and creamy feta cheese. It’s simple to shop for, comes together quickly, and always tastes like summer.

Serve it as a side dish, or make it a full meal by topping it with grilled chicken, shrimp scampi, or your favorite protein. For an Italian twist, try our Italian pasta salad with salami. It’s just as easy and just as delicious.

Key Ingredients

  • Pasta: I used mini farfalle in the photos, but choose a shape that has plenty of nooks and crannies to catch the dressing. Penne, fusilli, rotini, farfalle (bow tie), and orzo are all great options.
  • Veggies: This calls for the same veggies as a traditional Greek salad, except for the cucumber, which doesn’t hold up as well over time. I add tomatoes, red onion, and green bell pepper.
  • Olives: I’ve used pitted Kalamata olives in the photos, but feel free to use your favorite olives instead. Consider black, green, or Castelvetrano olives.
  • Feta Cheese: Choose feta sold in brine if you can. It tastes better than pre-crumbled feta, and you can even add a spoonful of the brine to the dressing for more flavor.
  • Pepperoncini Peppers: These are optional, but I love them. I like to slice them thin and mix them into the salad, plus add a splash of the pepperoncini brine to the dressing for even more flavor. I do the same with our classic pasta salad.
  • Greek Salad Dressing: You’ll make it with olive oil, red wine vinegar, dried oregano, salt, and pepper. I also add a bit of feta brine and pepperoncini brine (trust me, it’s delicious!).

Second, we use feta cheese packed in brine and stir a couple of tablespoons of that cloudy, salty liquid into the dressing.

You Will Need

Greek Pasta Salad

8 ounces short-cut pasta, such as bow-tie, fusilli, or penne (226g)

1/2 cup thinly sliced red onion

3 small tomatoes, chopped, 1 ¼ cups

1 green bell pepper, chopped

1 ¼ cups Kalamata olives, pitted and halved

8 ounces feta cheese, cut into ½-inch cubes (226g)

4 pepperoncini peppers, thinly sliced, optional


Salad Dressing

1/4 cup extra-virgin olive oil (60ml)

1/4 cup red wine vinegar (60ml)

2 tablespoons brine from jar of pepperoncini peppers or use fresh lemon juice (30ml)

2 tablespoons brine from feta, optional (30ml)

1 ½ teaspoons dried oregano

1/4 teaspoon fine sea salt plus more to taste

Directions

    1Place the sliced onion in a small bowl and cover with cold water. Set the bowl aside for 10 minutes so that the raw flavor of the onion calms a little. Drain and rinse the onions before adding them to the salad.

    2Bring a large pot of salted water to a boil. Add pasta and cook until tender, 6 to 10 minutes (check the package for recommended cook time). Drain and rinse well under cold water.

    3While the pasta cooks, in the bottom of a large bowl, make the dressing. Whisk the olive oil, red wine vinegar, pepperoncini brine, feta brine, oregano, salt, and black pepper until well blended.

    4Add the drained and rinsed pasta to the dressing and mix well.

    5Stir in the drained and rinsed red onion, tomatoes, bell pepper, olives, feta cheese, and sliced pepperoncini peppers.

    6Taste for seasoning and adjust with salt and pepper as needed. Serve or, for the best results, cover and refrigerate for at least 30 minutes and up to 5 days.

  • Feta brine: We buy feta cheese that’s packaged in brine. That cloudy liquid is salty, creamy, and delicious whisked into our dressing. If you don’t find feta sold in brine, that’s okay. The salad still tastes great, but if you can find it, buy it. The feta is better, and you can use the brine to season all sorts of things (this pasta salad, included).
